Mediterranean Chickpeas with Vegetables

Heat oil in a large nonstick skillet over medium-high heat until hot
- 1 Tablespoon olive oil
- 1 cup diced onion
- 1 clove garlic -- minced
- 2 teaspoons dried basil
- 1/2 teaspoon sugar
- 1/2 teaspoon pepper
- 1/8 teaspoon salt
- 2 bay leaves
- 1 can (28 ounce) diced tomatoes -- undrained
- 1 can (19 ounce) chickpeas -- rinsed and drained
- 2 cups diced zucchini
- 2 cups hot cooked rice

- 3 ounces unsweetened chocolate
- 6 Tablespoons unsalted margarine

- 5 zucchini -- grated
- 3 onions -- grated
- 1 1/2 cups flour

- 3/4 cup oil
- 2/3 cup water
- 3 eggs
- 1 Tablespoon chicken soup bouillon

Wild Rice and Basmati Pilaf with Sausage

Bring a large pot of salted water to a boil; add the wild rice and cook until just tender, about 40 minutes; drain
- 3/4 cup wild rice
- 2 Tablespoons oil
- 8 ounces sweet Italian sausage -- casings removed
- 2 leeks -- halved lengthwise and sliced thinly
- 3/4 cup basmati rice
- 2 Tablespoons fresh parsley
Salami Quiche Florentine

Preheat oven to 375. In a medium bowl, whisk the eggs, soy milk, cayenne pepper and salt
- 4 large eggs
- 1/2 cup soy milk
- pinch cayenne
- 1/4 teaspoon salt
- 1/2 red onion -- minced
- 1/2 cup packed baby spinach leaves -- coarsely chopped
- 12 small pastry shells or 1 9" shell
- 3 or 4 Tablespoons mustard
- 4 ounces salami
Spaghetti Pizza

- 1 cup shredded cheese

- 1 jar marinara sauce
- 3 cups shredded cheese
