Garlic Vinaigrette

Combine chick peas, cucumber, olives, onion, and parsley
- 1 15 ounce can chick peas
- 1 medium cucumber -- sliced and quartered
- 1/2 cup sliced ripe olives
- 1/3 cup chopped red onion
- 1/4 cup minced fresh parsley
- 3 Tablespoons oil
- 3 Tablespoons red wine vinegar
- 1 Tablespoon sugar
- 1 Tablespoon fresh lemon juice
- 2 cloves garlic -- minced
- 1/2 teaspoon grated lemon peel
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Falafel Turkey Burgers

In a large mixing bowl, add your ingredients except the olive oil
- 1 pound ground turkey
- 1 pound ground lamb
- 1/2 red onion -- diced
- 1/2 teaspoon fresh minced garlic
- 1/2 cup chick peas -- mashed
- 1 package falafel mix
- 2 teaspoons dried mint leaves
- 3 Tablespoons extra virgin olive oil
Easy Stove Top Ratatouille

In a large pot over medium heat, heat the olive oil
- 2 Tablespoons oil
- 3 cloves garlic -- crushed
- 2 medium yellow onions -- chopped
- 1 medium eggplant -- cut into 1" chunks
- 4 zucchini -- cut into chunks
- 1 green pepper -- cut into chunks
- 1 14.5 ounce can Italian style tomatoes -- coarsely chopped
- 2 Tablespoons balsamic vinegar
- 1/2 cup halved pitted black olives
- 2 teaspoons dried Italian seasoning
- salt and pepper
Creamy Potato Salad

Cook potatoes in boiling water 15 minutes or until tender
- 1 pound red potatoes -- unpeeled, cut into chunks
- 1/4 cup light Italian salad dressing
- 1/3 cup Miracle Whip®
- 1 1/2 teaspoons dijon mustard
- 4 scallions -- sliced
Black and White Cookies II

For the cookies:Preheat oven to 350
- 4 cups (16 ounces) cake flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 16 Tablespoons (2 Sticks) margarine -- softened
- 1 3/4 cups (12 1/4 ounces) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon extract I -- ( do not use lemon oil)
- 1 cup milk
- ICINGS
- 1/4 cup light corn syrup
- 1/3 cup water
- 5 cups (20 ounces) confectioners sugar
- 1/2 teaspoon vanilla extract
- 2 ounces unsweetened chocolate -- melted
- 2 to 4 Tablespoons water
Brisket II

Mix and pour over brisket
- 1 can coke
- 1 package onion soup mix
- 1 bottle chili sauce
Artichoke Squares

Coarsely chop artichoke hearts and place in bowl
- 2 14 ounce cans artichoke hearts -- well drained
- 6 Tablespoons butter
- 1/2 cup bread crumbs
- 2 medium onions -- chopped
- 9 eggs -- beaten
- 1/4 teaspoon cayenne pepper
- Salt -- to taste
- 1/2 teaspoon oregano
- 1 pound shredded cheddar cheese
- 2 tablespoons minced parsley
Blueberry Squares

Combine both ingredients. Do not add anything else
- 1 package angel food cake mix
- 22 ounces can light fruit pie filling -- blueberry
Easy Glazed Chicken

Stir everything in a medium saucepan and cook over medium heat until the butter is melted
- 2/3 cup orange juice
- 1/4 cup lemon juice
- 2 Tablespoons A-1 or other steak sauce
- 2 Tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 cup brown sugar -- packed
- 4 Tablespoons margarine
- 3 pounds chicken pieces
