Salmon with Citrus Sauce

Whisk all ingredients together in a saucepan over medium heat
- 2 cups orange juice
- 1 Tablespoon lemon juice
- 1/4 teaspoon ground ginger
- 1/3 cup brown sugar
- 3 Tablespoons soy sauce
- 1/4 teaspoon Worcestershire sauce
- 2 1/2 Tablespoons cornstarch
Spinach Salad with Mandarin Orange Dressing

To make dressing, in a food processor process orange segments
- ORANGE DRESSING
- 8 mandarin orange segments
- 1/4 cup oil
- 1 Tablespoon Plus 1 teaspoo sugar
- 1/2 teaspoon salt
- 2 Tablespoons balsamic or red wine vinegar
- 2 or 3 dashes Tabasco sauce
- Spinach
- 1/4 cup sunflower seeds
- 1 11 ounce can mandarin oranges -- (reserve 8 segments for dressing)
- 1/2 red onion -- thinly sliced
Baked Gefilte Fish Kugel

Saute onions in a little oil
- 2 packages Benz's Gefilte Fish -- thawed
- 3 onions -- chopped
- 3 eggs
- 3 Tablespoons honey
- 3 Tablespoons matzo meal
Creamy Lemon Squares

Preheat oven to 350. Line 8 inch square pan with foil, allowing the foil to hang over the sides
- 20 reduced fat Nilla wafers -- finely crushed
- 1/2 cup flour
- 1/4 cup packed brown sugar
- 1/4 cup cold margarine
- 1 8 ounce package Neufchatel cheese -- softened
- 1 cup sugar
- 2 eggs
- 2 Tablespoons flour
- 3 Tablespoons lemon zest -- divided
- 1/4 cup fresh lemon juice
- 1/4 teaspoon baking powder
- 2 teaspoons powdered sugar
Cashew Coffee Biscotti

Preheat oven to 350. Spread cashews on a large baking sheet and toast for 10 minutes until golden brown
- 1 1/2 cups unsalted cashews
- 1 3/4 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2/3 cup sugar
- 4 tablespoons cold butter -- cut into small cubes
- 2 Tablespoons coffee granules
- 2 eggs
- 1/2 teaspoon vanilla extract
Girl Scout Cookies

Preheat the oven to 325. Place 2 oven racks as close to the center of the oven as possible
- 1 1/2 cups (7.5 ounces) flour
- 1 cups (4 ounces) Dutch-process cocoa powder -- divided
- 1/2 teaspoon salt
- 1 1/2 sticks butter -- at room temperature
- 1 cup plus 2 T. (11 ounces) sugar
- 1 extra large egg
- 1/2 teaspoon mint extract
- 10 ounces mint chocolate chips
- 1/3 cup (3 ounces) vegetable shortening
Glazed Root Vegetables

Place the beet, onion, sweet potatoes, carrots, parsnips and squash into a 6 quart slow cooker
- 1 large beet -- peeled and cut into 1 inch chunks
- 1 large red onion -- peeled and cut into 1 inch chunks
- 2 medium sweet potatoes -- cut into 1 inch cubes
- 1 cup baby carrots
- 2 large parsnips -- cut into 1" cubes
- 1 acorn squash -- with skin, cut into 2" cubes
- 1/2 cup orange juice
- 3 Tablespoons duck sauce
- 1 Tablespoon salt
- 1/4 teaspoon dried rosemary -- crumbled
Broccoli Ranch Slaw

- 1 10 ounce bag broccoli slaw
- 3/4 cup ranch dressing
- 2 Tablespoons fresh chives
- 2 Tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
Artichoke Pasta Salad

- 4 cups cooked penne pasta
- 1 cup halved cherry tomato
- 1 14 ounce can drained quartered artichoke hearts
- 1/4 cup low fat Italian dressing
- 1/4 cup chopped fresh parsley
