Potato Leek Soup

Clean and thinly slice leeks, discarding root ends
- 2 large leeks -- sliced
- 1 Tablespoon oil
- 2 cloves garlic -- crushed
- 2 Tablespoons flour
- 6 cups water
- 2 sweet potatoes -- cut into chunks
- 2 potatoes -- cut into chunks
- salt
- 1/4 teaspoon pepper
- 2 Tablespoons fresh dill -- minced
Garbanzo Cucumber Salad

Combine chick peas, cucumber, olives, onion, and parsley
- 1 15 ounce can chick peas
- 1 medium cucumber -- sliced and quartered
- 1/2 cup sliced ripe olives
- 1/3 cup chopped red onion
- 1/4 cup minced fresh parsley
- 3 Tablespoons oil
- 3 Tablespoons red wine vinegar
- 1 Tablespoon sugar
- 1 Tablespoon fresh lemon juice
- 2 cloves garlic -- minced
- 1/2 teaspoon grated lemon peel
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Minted Fruit Rice Salad

Heat pineapple juice and water in saucepan to boiling
- 2/3 cup pineapple juice
- 1/3 cup water
- 1 cup instant rice
- 1 1 ounce can mandarin orange -- drained
- 1 8 ounce can crushed pineapple -- undrained
- 1/2 cup chopped cucumber
- 1/3 cup chopped red onion
- 3 Tablespoons chopped mint
Rice Kugel

Mix above ingredients. Grease casserole dish
- 2 cups cooked rice
- 1 cup milk
- 1 package instant vanilla pudding and pie filling
- 3 eggs
- cinnamon
- 1 cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup oil
Sweet and Sour Brisket

Place onions in pan. Place brisket on top of onions and rub with garlic and paprika
- 3/4 onions -- sliced
- 4 1/2 to 5 pound brisket
- 3 cloves garlic -- crushed
- 1 teaspoon paprika
- 1 cup salsa
- 3 Tablespoons honey
- 2 Tablespoons lemon juice
Hazelnut Ganache Cups

In a small saucepan, bring the cream to a boil
- 8 ounces bittersweet or semisweet chocolate -- coarsely chopped
- 3/4 cup heavy whipping cream
- 1 Tablespoon alcohol flavoring or 1 teaspoon vanilla extract
- 2/3 cup hazelnuts -- ground
Chicken a'la Doris

Arrange chicken in single layer in roasting pan
- 2 chickens -- cut up
- 8 to 10 large potatoes -- peeled and quartered
- 6 carrots -- cut into chunks
- Salt -- pepper and garlic powder
- 3 onions -- sliced
- 1 Tablespoon oil
- 1/2 cup ketchup
- 1/2 cup water
Jamaican Jerk Chicken

In a large bowl, mix ketchup, vinegar, lemon juice, garlic and cumin
- 3 medium Itlalian eggplants -- unpeeled, cut into 3/4 inch dice
- 1/2 cup ketchup
- 2 tablespoons white vinegar
- 1 tablespoon lemon juice
- 3 cloves minced garlic
- 1/8 teaspoon ground cumin
- 2 red bell pepper -- cut into 1/2 inch dice
- 1 large onion bagel -- very thinly sliced
Corn Bread

Preheat oven to 350. Grease a 9 x 13 inch pan
- 1 cup margarine -- melted
- 1 cup sugar
- 4 eggs
- 16 ounces canned creamed corn
- 1 cup flour
- 1 cup yellow corn meal
- 4 teaspoons baking powder
- 1/4 teaspoon salt

- 1 cup heavy cream
- 1/4 cup light corn syrup
- 1/2 teaspoon vanilla extract
