Ceasar Salad

Process all ingredients, except lemon juice and cheese
- 1 large bunch romaine lettuce
- 3/4 cup olive oil
- 3 Tablespoons red wine vinegar
- 1 teaspoon worcestershire sauce
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon ground mustard
- 1/2 lemon
- dash pepper
- 1/4 to 1/2 cup shredded parmesan cheese
Chocolate Souffle Cookies

Preheat oven to 350. Line two cookie sheets with parchment paper
- 2 large egg whites -- at room temperature
- 1/2 teaspoon vanilla extract
- 1/4 cup sugar
- 3/4 cup finely chopped walnuts
- 6 ounces bittersweet chocolate -- melted and cooled
Strawberry Vanilla Cheesecake

Position an oven rack in the middle of the oven
- 2 cups chocolate wafer cookie crumbs
- 6 Tablespoons butter or margarine -- melted
- 12 ounces frozen and defrosted or fresh strawberries
- 2 pounds cream cheese -- softened 3 to 4 hours at room temperature
- 1 1/3 cups sugar
- 2 Tablespoons flour
- 4 large eggs -- room temperature
- 2 teaspoons vanilla -- divided
- 2 teaspoons fresh lemon juice
Berry Cheese Pie

Mix cheese, 1 tablespoon. of sugar and lemon rind in small bowl until blended
- 1 8 ounce package Neufchatel cheese -- softened
- 1/2 cup sugar
- 1/4 teaspoon grated lemon rind
- Graham cracker crust
- 2 Tablespoons cornstarch
- 1 basket (1 pint) strawberries -- hulled and halved
- 1 Tablespoon lemon juice
- 1 cup fresh or frozen blueberries
Brownie Cupcakes

Preheat oven to 325. Mix together flour, cocoa powder, baking powder and salt
- 3/4 cup flour
- 1/2 cup dutch-process cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup granulated sugar
- 2/3 cup brown sugar
- 3/4 cup unsalted butter -- melted and slightly cooled
- 1/2 teaspoon vanilla
- 3 eggs
- 2/3 cup semisweet chocolate chips
Butternut Squash Kugel

Mix squash and other ingredients until smooth
- 1 20 oz. package frozen butternut squash -- cooked
- 1/2 container coffee creamer
- 3 eggs
- 1 stick margarine -- melted
- 1/2 cup sugar
- 1/2 cup flour
- Cinnamon
Ricotta Spinach Pie

Preheat oven to 350. Melt butter in heavy skillet over medium heat
- 1 pie crust
- 3 Tablespoons butter
- 1 medium onion -- chopped
- 1 10 ounce package frozen chopped spinach -- thawed and squeezed dry
- salt and pepper -- to taste
- 1 15 ounce container ricotta cheese
- 8 ounces mozzarella cheese -- grated
- 1 cup grated Parmesan cheese
- 3 large eggs -- beaten
Asian Rice

Cook rice in water until done
- 1 1/3 cups brown rice
- 2 2/3 cups water
- 6 green onions -- sliced
- 2 red peppers -- diced
- 1 cup chopped toasted cashews
- 1 cup dried cranberries
- Salt and pepper
- DRESSING
- 1/3 cup soy sauce
- 1/4 cup toasted sesame oil
- 3 Tablespoons rice vinegar
- 2 Tablespoons orange juice
- 2 Tablespoons sugar
- 2 cloves garlic -- minced

For the dough, combine the melted butter, oil, water and salt in a bowl and mix well
- RICH DOUGH
- 1/2 cup butter -- melted and cooled
- 1/2 cup canola oil
- 1/2 cup lukewarm water
- 1/2 teaspoon salt
- 3 1/2 cups flour
- POTATO CHEESE FILLING
- 1 1/4 cups plain mashed potatoes
- 1 cup (packed) shredded cheese
- 1/2 cup finely grated parmesan or Romano cheese
- 2 large eggs
- pinch pepper
- EGGPLANT FILLING
- 1 1/2 cups eggplant pulp -- (from 2 large broiled eggplants) drained
- 1 cup grated parmesan or Romano cheese
- 2 large eggs
- 1/4 teaspoon salt
- Matzo meal -- optional
