Asian Chicken Burgers

Preheat oven to 375. Grate the carrot and 1/2 onion into a large bowl
- 1 small carrot
- 1 small red onion -- halved
- 1 pound ground chicken
- 1/4 cup panko
- 1/4 cup hoisin sauce
- 1 Tablespoon grated peeled gingerroot
- 4 teaspoons soy sauce
- 3 teaspoons hot Asian chili sauce
- 8 ounces mushrooms
- 2 teaspoons sesame oil
- Juice of 1 lime

Creamy Vegetable Soup

In a large heavy pot, combine the onions, celery, red pepper, and margarine
- 1 large onions -- chopped
- 1 large celery stalk -- chopped
- 1/3 cup chopped red pepper
- 1 1/2 teaspoons tub style canola margarine
- 1 Tablespoon flour
- 1 large carrot -- diced
- 2 1/4 cups diced boiling potatoes
- 1/2 cup shredded green cabbage or cauliflower florets
- 2 large bay leaves
- 1 cup frozen white corn kernels -- divided
- 1/4 cup chopped fresh scallion or chives
- 2 cups milk
- salt and pepper -- to taste
Tomato Meat Cabbage Soup

Heat oil in a large pot over medium heat
- 2 Tablespoons oil
- 1 onion -- diced
- 2 cloves garlic -- crushed
- 1 pound flanken -- spiced witih salt and pepper
- 1 19 ounce can tomato juice
- 1/2 can water -- (about 10 ounces)
- 3 Tablespoons lemon juice
- 1/2 teaspoon black pepper
- 6 ounces apricot jam
- 1 head cabbage -- shredded
Marinated Tomatoes

- 3 large tomatoes -- cut into 1/4" slices
- 2 Tablespoons sliced green onions
- 1 Tablespoon chopped fresh parsley
- 1 Tablespoon chopped fresh basil
- 1/4 cup plus 2T red wine vinegar
- 1 Tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1/4 teaspoon pepper
- 1 clove garlic -- minced
Pineapple Upside Down Noodle Kugel

In a 4 qt. pot of boiling water cook noodles until soft, 12 to 15 min
- 8 ounces medium noodles
- 3 Tablespoons margarine -- melted
- 6 eggs -- beaten
- 3/4 cup sugar
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1 can pineapple slices
- 1 cup pineapple juice, drained from can
- maraschino cherries
- 1/2 cup brown sugar

- 2 stalks celery

- 2 cans (14.5 ounces each) broth
- 2 cups water
- 2 small bunches broccoli -- cut into 3" lenghts (about 4 1/2 cups)
- 1/2 cup rice -- uncooked
- 2 cups milk
- 1/4 cup grated parmesan cheese
