Nutty Barley Bake

Rinse and hull strawberries
- 24 ounces fresh strawberries
- 1 package vanilla pudding
- 1 package strawberry jello
- 2 cups water
Tomato Olive Salad

Toast pine nuts. Add to tomatoes, olives and green onions
- 40 cherry tomatoes -- halved
- 1 cup pitted and sliced green olives
- 1 6 ounce can black olives -- drained and slived
- 2 green onions -- minced
- 3 ounces pine nuts
- 1/2 cup olive oil
- 2 Tablespoons red wine vinegar
- 1 Tablespoon sugar
- 1 teaspoon dried oregano
- Salt and pepper -- to taste
Quesadillas

Saute onion, red pepper and garlic in 1 Tablespoon of the oil until tender
- 1/2 cup diced red onion
- 1/2 sweet red pepper -- diced
- 1 clove garlic -- minced
- 2 Tablespoons olive oil
- 1/2 teaspoon salt
- 12 8" tortillas
- 2 cups grated cheddar or Monterey Jack
Chocolate Mousse

In a saucepan, melt the marshmallow fluff, chocolate and milk until melted and thick
- 1 cup marshmallow fluff
- 2 ounces bittersweet chocolate
- 1/4 cup milk or soy milk
- dash salt
- 1 teaspoon vanilla extract
- 1 1/2 cups whipped topping
- 9 inch graham cracker crust
Pineapple Spinach Salad

Combine all ingredients. Toss well
- 1 20 ounce can pineapple chunks -- drained
- 4 cups packed spinach leaves
- 1/2 cup sliced red onion
- 1/2 cup toasted sliced almonds
- 1/2 cup Italian dressing
Sweet and Sour Carrots

Cook carrots in boiling, salted water for about 15 minutes or until tender
- 1 pound carrots thickly sliced
- 2 Tablespoons oil
- 1 onion -- sliced
- 2 teaspoons soy sauce
- 2 teaspoons cornstarch
- 1 Tablespoon brown sugar
- 1 Tablespoon cider vinegar
- 2 teaspoons lemon juice
Lox Rollups

Spread cream cheese over tortillas and evenly place lox and spinach on top
- 1 ounce (8 ounes) chive and onion cream cheese
- 4 large 10 inch spinach tortillas
- 24 ounces lox
- baby spinach
Meat Rice Casserole

In a skillet, saute onion, beet, parsley and seasonings in olive oil until lightly browned
- 1 large onion -- chopped
- 1 1/2 pounds ground beef
- 1/4 teaspoon parsley
- 1/2 teaspoon garlic powder
- Paprika -- to taste salt and pepper
- 1 Tablespoon olive oil
- 1/2 cup sliced mushrooms
- 4 cups mashed potatoes
Lima Bean Salad

Combine first four ingredients in large bowl
- 3 Tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon Dijon mustard
- 2 Tablespoons olive oil
- 1 cup cooked bulgur
- 1 cup frozen lima beans
- 1 cup chopped yellow pepper
- 1/4 cup finely chopped red onion
- 1/4 cup fresh chives
- 1/4 cup chopped fresh parsley
- 1 can chickpeas
- 1 can kidney beans
Won Ton Crisps

- 1 1/2 teaspoons dried Italian seasoning -- crushed
- 1/2 teaspoon garlic salt
