Grilled Corn Salsa

1. Preheat grill to 350° to 400° (medium-high)
- 3 ears fresh corn, husks removed
- Vegetable cooking spray
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 medium tomatoes, seeded and chopped
- 2 jalapeño peppers, seeded and minced
- 2 (15-oz.) cans black beans, rinsed and drained
- 3/4 cup chopped fresh cilantro
- 1/3 cup fresh lime juice
- 2 tablespoons chopped fresh mint
- 2 avocados
- Tortilla chips (optional)

- Extra-virgin olive oil
- 1 large onion, cut into 1/2-inch dice
- 1 green pepper, stem, seeds and pith removed, cut into 1/4-inch dice

- 2 pounds red potatoes, washed well and quartered

Shrimp and Lobster Sauce

Peel shrimp. Make a shallow cut length wise down back of each shrimp; wash out vein
- 1 lb medium raw shrimp ( in shells)
- 1 teaspoon cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon toasted sesame oil
- 1/4 cup chicken broth
- 1 tablespoon cornstarch
- 1 teaspoon dark soy sauce
- 1 tablespoon vegetable oil
- 2 tablespoons vegetable oil
- 1/2 lb ground lean pork
- 2 garlic cloves, finely chopped
- 1 teaspoon finely chopped gingerroot
- 1/2 cup chicken broth
- 2 tablespoons dry white wine
- 2 eggs, slightly beaten
- 2 green onions, chopped ( with tops)
Beach Shrimp

1. Place first 4 ingredients in a 13- x 9-inch baking dish, tossing to coat
- 3 pounds unpeeled, large raw shrimp*
- 1 (16-oz.) bottle Italian dressing
- 1 1/2 tablespoons freshly ground pepper
- 2 garlic cloves, pressed
- 2 lemons, halved
- 1/4 cup chopped fresh parsley
- 1/2 cup butter, cut up
Deli Stuffed Sandwich

Stir together first 5 ingredients
- 2 tablespoons olive oil
- 1/2 cup chopped ripe olives*
- 1 tablespoon chopped fresh or 1 teaspoon dried oregano
- 1 tablespoon cider vinegar
- 1/2 teaspoon pepper
- 1 (16-ounce) round Italian bread loaf
- 1/4 pound thinly sliced cooked turkey
- 1/4 pound thinly sliced cooked ham
- 1 (8-ounce) package shredded Italian cheese blend
- Garnishes: whole and sliced radishes, celery leaves
Salmon Salad with Yogurt and Dill

Makes 1 full-meal salad or 2 side dish salads, recipe can be doubled or quadrupled if you have enough salmon
- Dressing:
- 6-8 oz. leftover cooked salmon (you could also use one can of salmon, although of course fresh cooked salmon is best)
- 1 cup celery, cut into 1/4 inch slices
- 1/4 cup sliced green onion
- 2 T chopped fresh dill
- 2 T fat free Greek yogurt (I used Fage Total 0% Greek Yogurt)
- 2 T mayo or light mayo (do not use fat free)
- 2-3 tsp. fresh lemon juice (I used 3 tsp., but I like sour flavors)
- 1/2 tsp. celery seed
- 1/2 tsp. Vege-sal (or use slightly less regular salt)
Salmon Salad

- 2 cups cooked, flaked salmon
- 2 hard-boiled eggs, crushed
- 1 red or green bell pepper, diced
- 1 cucumber, peeled, seeded, and diced
- 1/2 cup chopped onions
- 4 to 5 tablespoons mayonnaise, or enough to moisten
- 1/4 teaspoon cayenne pepper, optional
- Salt and pepper
- 1/2 lemon, juiced
