Cuban Black Beans

This is my Mother's favorite black bean recipe
- 1 lb dried black beans
- 1 green bell pepper, chopped
- 10 cups water
- 2/3 cup olive oil
- 1 large onion, minced
- 1 green bell pepper, minced
- 4 garlic cloves, pounded
- 4 teaspoons salt
- 1/2 teaspoon pepper
- 1/4 teaspoon dried oregano
- 1 teaspoon sugar
- 1 bay leaf
- 2 tablespoons vinegar
- 2 tablespoons wine
- 2 tablespoons olive oil
Hunts® Arroz con Pollo y Frijoles Negros

Spray large skillet with cooking spray; heat over medium-high heat
- PAM® Original No-Stick Cooking Spray
- 6 (6 ounce) bone-in, skin-on chicken thighs or drumsticks
- 1/2 teaspoon adobo seasoning blend
- 1 cup long grain white rice, uncooked
- 1/4 cup sliced green onions, divided
- 1 (8 ounce) can Hunt's® Tomato Sauce
- 1 (15 ounce) can Black Beans, drained, rinsed
- 1 1/2 cups water
- 1 tablespoon caldo con sabor de pollo (chicken bouillon)
Coconut Cream Angel Pie Recipe

In a small heavy saucepan, combine the sugar, cornstarch and salt
- MERINGUE:
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 cups whole milk
- 3 egg yolks, lightly beaten
- 1/2 cup flaked coconut
- 1 tablespoon butter
- 1-1/2 teaspoons vanilla extract
- 1 pastry shell (9 inches), baked
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon vanilla extract
- 6 tablespoons sugar
- 1/4 cup flaked coconut
Classic Potato Salad

I make this classic potato salad a lot for pot lucks and picnics
- 4 medium potatoes, cooked and diced
- 3/4 cup mayonnaise
- 1 tablespoon cider vinegar
- 1 tablespoon sugar
- 1/2 tablespoon yellow mustard
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 celery ribs, sliced
- 1/2 cup onion, minced
- 2 1/2 hard-boiled eggs
- 1/2 to taste paprika
Chicken Pot Pie

Preheat oven to 425 degrees F (220 degrees C
- 1 pound skinless, boneless chicken breast halves - cubed
- 1 cup sliced carrots
- 1 cup frozen green peas
- 1/2 cup sliced celery
- 1/3 cup butter
- 1/3 cup chopped onion
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon celery seed
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 2 (9 inch) unbaked pie crusts
Homemade Coconut Milk

Instructions Heat water, but don't boil
- 4 cups of water
- 1.5-2 cups of unsweetened shredded coconut
Herb Crusted Smoked Potatoes

rub EVOO over potatoes, then roll them in the herb mixture
- 12 Yukon gold Potatoes (wash but do not peel)
- 1 cup EVOO
- Herb Mix
- 2 tablespoons ground sage
- 2 tablespoons granulated garlic
- 2 tablespoons dried parsley
- 2 tablespoons kosher salt
- 2 tablespoons coarsely ground black pepper
- 2 tablespoons sugar
- 2 tablespoons paprika
Creamy Chicken Spaghetti Casserole

Place chicken in a pot of water and boil on medium-low heat for 30 to 40 minutes
- 1 whole Cut Up Fryer Chicken
- 1 stick 1/2 Cup Butter
- 16 ounces, weight White Mushrooms, Sliced
- 1/4 cup Dry White Wine
- Kosher Salt And Pepper
- 1/4 cup Flour
- 2 cups Chicken Broth (reserved From Chicken Or Canned)
- 1-1/2 cup Whole Milk
- 1/4 cup (additional) Dry White Wine
- 1 cup Freshly Grated Parmesan Cheese
- 1 cup Whole Black Olives, Chopped
- 1 teaspoon Kosher Salt, Or To Taste
- Freshly Ground Black Pepper
- Extra Cheese, For Sprinkling
- 1 pound Thin Spaghetti
Homemade Chunky Granola

- The Dry:
- 2 1/2 Cups quick, 1 minute oats
- 2 1/2 Cups old-fashion oats
- 2 Cups rice krispies cereal
- 1 Teaspoon cinnamon
- 1 Teaspoon seasalt
- The Wet:
- 3/4 Cup pureed peaches (Or any other fruit of your choice; i.e. apple sauce, pears, nectarine, etc.)
- 1/2 Cup honey
- 2/3 Cup packed light/golden brown sugar
- 2 Tablespoons vegetable oil
- 2 Teaspoons vanilla extract
- The Crunchy Goodies:
- 1 Cup raw almonds
- 2 Cups raw pecans
- 1/2 Cup unsalted sunflower seeds
