Sausage and Spicy Tomato Dip

Cook the sausage in a skillet over medium heat until evenly browned and no longer pink
- 1 (16 ounce) package pork sausage (regular or hot)
- 1 (15 ounce) can diced tomatoes with mild green chilies, undrained
- 2 (8 ounce) packages cream cheese, room temperature

Baked Salmon with Garlic and Dijon

Instructions Preheat the oven to 450° F
- 1 1/2 lbs salmon fillets (this was a wild sockeye)
- 2 Tbsp parsley, freshly chopped
- 2 large or 3 small garlic cloves, pressed
- 1/2 Tbsp Dijon mustard (we used grey poupon)
- 1/2 tsp salt
- 1/8 tsp ground black pepper
- 1/8 cup mild olive oil (not extra virgin)
- 2 Tbsp of fresh lemon juice
- Lemon slices (for effect :)

- 3 -4 medium frozen strawberries
