Eggs Benedict To Make-Ahead

In a 9 x 13" baking dish, arrange muffins, cut side up
- 4 English muffing, split and toasted
- 16 thin slices Canadian-style bacon
- 8 eggs
- 1/4 cup butter
- 1/4 cup flour
- 1 teaspoon paprika
- 1/8 teaspoon nutmeg
- 2 cups milk
- 2 cups shredded Swiss cheese
- 1/2 cup dry white wine
- 1/2 cup crushed cornflakes
- 1 Tablespoon melted butter

Mix all together. Yields 3 quarts
- 2 cans frozen orange juice
- 1 can frozen lemon juice
- 2 1/2 cups pineapple juice
- 1 large ginger ale
- 2 Tablespoons cherry juice
Fiesta Cole Slaw (Mine)

1. Cover green and red cabbage with cold water combined with 1 teaspoon salt; let soak about 1 hour
- 2 cups finely shredded green cabbage
- 2 cups finely shredded red cabbage
- 1 1/4 teaspoons salt
- 2/3 cup mayonnaise
- 2 teaspoons vinegar
- 2 teaspoons sugar
- 1/2 cup shredded carrot
- 1/2 cup thinly sliced ripe olives (optional)
- 1/4 cup finely chopped green pepper
Baked Stuffed Fish Fillets (Carol's)

Spread half the fillets in a baking dish
- 1 pound fish fillets (even number)
- stuffing--already made or Stove Top
- 1 cup white sauce with cheese added (like mac & cheese sauce)
Turkey Croquettes

1. Heat oil in a skillet, add celery and onion and sauté until lightly browned
- 2 Tablespoon olive oil
- 3 Tablespoons finely diced celery
- 1/4 cup finely diced onion
- 10 oz. ground turkey
- 1/2 cup cubed white bread
- 1/4 cup milk
- 1 egg, beaten
- 1 Tablespoon Dijon mustard
- 1 1/2 Tablespoons finely chopped parsley
- S & P
- 2/3 cup dry breadcrumbs
Tomato Pie (Taste of Home)

- FILLING:
- 1 cup plus 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup cold butter, cubed
- 2 to 3 tablespoons ice water
- 3/4 cup mayonnaise
- 1/2 cup shredded cheddar cheese
- 1/3 cup thinly sliced green onions
- 1 tablespoon minced fresh oregano
- 1/2 teaspoon ground coriander
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 medium tomatoes (1-3/4 pounds), cut into 1/4-inch slices
- 4 bacon strips, cooked and crumbled
Spinach in Bread (Carol's)

Cook spinach and drain well
- 2 packages frozen spinach
- 1 package dry leek soup
- 1 cup mayo
- 1 cup sour cream
- 1 loaf fresh pumpernickel bread, uncut

- 5 large tomatoes, peeled, cored & sliced thick
- Basil
- 3 Tablespoon chives

- 3/4 cup mayo

BLT Dip (Amy's)

1. In a large bowl, combine the sour cream, mayonnaise, bacon, tomatoes, and onions
- 2 Cups (16 oz.) Sour Cream
- 2 Cups Mayonnaise
- 2 pounds Sliced Bacon (Cooked and Crumbled)
- 6 Plum Tomatoes (Chopped)
- 3 Green Onions (Chopped)
- Crumbled Cooked Bacon or Thinly Sliced Green Onions (OPTIONAL)
Philly Cheesesteaks

In bowl, combine onions, 3 Tablespoons oil, salt and pepper
- 2 yellow onions, quartered, sliced 1/4" thick
- 6 Tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 3 red bell peppers, seeded, sliced 1/4" thick
- 1/2 pound mushrooms, sliced 1/8" thick
- 2 1/4 pounds chick eye steak, sliced paper thin
- 1 pound thinly sliced provolone cheese
- 6 soft hoagie rolls, split lengthwise, warmed
