- 1 1/2 pound thin spaghetti, broken in half
- 4 Tablespoons butter
- 4 cloves garlic, minced
- 1 pound white mushrooms, quartered
- 1/2 teaspoon salt
- 1 cup white wine
- 1/3 cup flour
- 4 cups turkey or chicken broth
- 8 ounces cream cheese
- 3 cups cooked (leftover) turkey, shredded or diced
- 1 cup finely chopped black olives
- 1 1/2 cups frozen peas
- 4 slices bacon, fried and cut into bits
- 1 cup grated Monterey Jack cheese
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- extra broth for thinning
- 1 cup panko bread crumbs
Hearty Beef Soup (Carol's)

Brown the ground beef, breaking it up with a spoon as it cooks
- 1 pound ground beef
- 3 large onions, chopped (3 cups)
- 1 clove garlic, minced
- 2 envelopes (or cubes) beef boullion
- 3 cups boiling water
- 2 cans (1 pound 12 oz. each) Italian tomatoes
- 1 cup red wine
- 1/2 teaspoon Italian herbs
- 1/2 teaspoon salt
- 1/4 teaspoon lemon pepper
- 1 package Rice-A-Roni
- 4 cups frozen mixed vegetables (from a 2 pound bag)
Cranberry Pecan Salad

Toast pecan halves in a warm oven
- 1 cup pecan halves
- 2 Tablespoons raspberry vinegar
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- fresh pepper
- 6 Tablespoons olive oil
- 3/4 cup cranberries
- 1/2 medium red onion, thinly sliced
- crumbled Feta cheese
- 6 cups mixed greens
Beefsteak Marinade using Vermouth

Combine all marinade ingredients in blender
- 1/4 cup salad oil
- 1/4 cup dry vermouth
- 1/4 cup soy sauce
- 1 teaspoon prepared mustard
- 1/2 teaspoon dry mustard
- 1 garlic clove, minced
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 2 teaspoons Worcestershire sauce
Herbed Pasta Alfredo

Melt the butter in a saucepan over medium heat; add green onions and garlic, and sauté 2 minutes
- 1 Tablespoon butter
- 1/4 cup chopped green onions
- 2 garlic cloves, minced
- 1 Tablespoon flour
- 1 can (12 oz) evaporated milk
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated Romano cheese
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- 1/4 teaspoon dillweed
- 6 cups hot cooked macaroni shells
- Green onion strips for garnish
Cantaloupe Soup

Scoop pulp from cantaloupes; wrap and refrigerate shells
- 4 medium cantaloupes, halved crosswise
- 1 1/2 cups apple juice
- 2/3 cup sugar
- 1/2 cup dry sherry
- 1 Tablespoon lemon juice
- 3/4 teaspoon each ginger and vanilla
- Mint sprigs or tin lime slices to garnish (optional)

Chocolate-Pecan Caramel Candy Bar

Preheat oven to 350 degrees
- 1 1/2 cups flour
- 1/2 cup firmly packed light brown sugar
- 1/2 cup unsalted butter
- Topping;
- 6 Tablespoons unsalted butter
- 1 cup firmly packed dark brown sugar
- 3 Tablespoons honey
- 3 Tablespoons heavy cream
- 2 Tablespoons maple syrup
- 1 1/2 cups chopped pecans or walnuts
- 1/2 cup semisweet chocolate chips
Black Forest Trifle

Combine sugar, cocoa, and cornstarch in a saucepan
- 1/4 cup plus 2 Tablespoons sugar
- 1/4 cup unsweetened cocoa
- 3 1/2 Tablespoons cornstarch

- 3/4 teaspoon vanilla extract
