Fish with Crisp Potatoes

1. Preheat oven to 400 degrees
- 4 medium Yukon Gold potatoes, scrubbed and cut into 1/4" slices
- 2 Tablespoons virgin olive oil
- 4 skinless halibut or other fish fillets (4-6 oz each)
- 1 bunch slender asparagus, trimmed
- 6 plum tomatoes, chopped (about 1 cup)
- 2 Tablespoons chopped fresh basil
- 1 Tablespoon fresh lime juice
- 1/2 teaspoon minced garlic
Balsamic Vinaigrette with Equal

Whisk vinegar, Equal, mustard, S & P in a small bowl until well blended
- 1/4 cup balsamic vinegar
- 4 teaspoons Equal Spoonful (or 2 packets Equal sweetener)
- 1 Tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup olive oil
Oven-Baked French Toast with Mixed Berry Sauce

Heat oven to 375 degrees. Lightly coat a 9 x 13" baking dish with Pam
- Berry Sauce:
- 16 to 20 oz. loaf sliced white bread, ends discarded
- 1/3 cup granulated sugar, plus extra for sprinkling
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 6 large eggs
- 2 teaspoons vanilla extract
- 2 cups low-fat milk
- 1 Tablespoon lemon juice
- 2 teaspoons cornstarch
- 3 cups fresh or frozen mixed berries
- 1/2 cup granulated sugar
- 2 Tablespoons water
- 1/4 teaspoon salt
DOGGIE - Banana Mutt Cookies

- 3 cups bananas, mashed
- 1 teaspoon vanilla
- 6 cups oats
- 1 cup peanuts, chopped
- 1/3 cup applesauce, unsweetened
Pineapple Upside-Down Cake

1. Preheat oven to 325 degrees
- 4 eggs, separated
- 1/2 cup butter or margarine
- 1 cup light brown sugar, firmly packed
- 1 can (~20 oz.) pineapple slices, drained
- 1/2 cup coarsely chopped pecans (or walnuts)
- 10 maraschino cherries, drained and halved
- 1 cup sifted cake flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1 Tablespoon butter or margarine, melted
- 1 teaspoon almond or vanilla extract
- 3/4 cup heavy cream, whipped (optional)
Italian Brunch Torte (Amy's)

1. Preheat oven to 350 degrees
- 2 tubes (8 oz. each) refrigerated Crescent Rolls, divided
- 1 tsp. Olive Oil
- 1 pkg. (6 oz.) fresh Baby Spinach
- 1 cup sliced fresh Mushrooms
- 7 Eggs
- 1 cup grated Parmesan Cheese
- 2 tsp. Italian Seasoning
- 1/8 tsp. Pepper
- 1/2 lb. thinly sliced deli Ham
- 1/2 lb. thinly sliced Hard Salami
- 1/2 lb. sliced Provolone Cheese
- 2 jars (12 oz. each) Roasted Sweet Red Peppers, drained, sliced, and patted dry
Grammy's Lamb Shanks

- 1 garlic clove, minced
- 1 cup sliced celery
- 1 cup ketchup

- veal chops (with round bone), cut up

- 1/2 - 1 pint heavy cream
- 1-2 bouillon packets

In a medium sized bowl, microwave butter on high about 1 minute until melted
- 3 Tablespoons butter
- 2 Tablespoons grated Parmesan cheese
- 1/2 teaspoon each garlic salt and celery salt
- 1/2 teaspoon each dried oregano and basil
- 2 slices bread (white, rye, whole wheat)--cut in 1/2" cubes
One Pan Triple Chocolate Cake

- 1 pkg. instant chocolate pudding mix (4 serving size)
