- 1 teaspoon olive oil
- 3 garlic cloves, chopped
- 1/4 teaspoon salt
- 1 package fresh spinach (10 oz.)
- 1/2 cup basil leaves, loosely packed
- 1/3 cup (about 3 oz.) cream cheese, softened
- 1/8 teaspoon black pepper
- 1/3 cup plain fat-free yogurt
- 1/4 cup (1 oz.) Parmesan cheese, grated

Place tomatoes, basil, garlic, sun-dried tomatoes and mozzarella in a large bowl
- 4 large vine-ripened tomatoes, seeded and diced
- 1/2 cup basil leaves, julienned
- 3 large garlic cloves, minced
- 8 sun-dried tomatoes, julienned--optional
- 8 oz mozzarella, cubed
- 1/2 cup virgin olive oil, plus extra for drizzling over toasted bread
- 1/4 cup red vinegar

- 1 French baguette

- 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
- 1 tablespoon olive oil
- 2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
