Ham Pockets

Preheat oven to 400 degrees
- 1/2 teaspoon oil
- 1/4 cup onion, diced
- 1 lb. pizza dough, defrosted
- 1 cup diced cooked lean ham
- Ground black pepper, to taste
- 1/2 cup mozzarella cheese, shredded
- 1 cup baby spinach, chopped
Oven Roasted Vegetables

In a 9 x 13" baking dish, combine potatoes, carrots and onions
- 10 unpeeled whole tiny new potatoes, quartered
- 1 cup peeled and trimmed baby carrots (5 oz)
- 1 small onion, cut into wedges
- 1/4 cup olive oil
- 3 Tablespoons lemon juice
- 3 cloves garlic, minced
- 1 Tablespoon snipped fresh rosemary or oregano (or 1 teaspoon dried)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups eggplant, quartered lengthwise and cut into 1/2" wide strips
- 1 medium Bell pepper (red or green), cut into 1/2" wide strips
Bruschetta with Peppers and Gorgonzola

Preheat oven to 375 degrees
- 1/4 cup olive oil, plus extra for brushing bread
- 2 red bell peppers, seeded and cut into thin strips
- 2 yellow bell peppers, seeded and cut into thin strips
- 1 teaspoon sugar
- 2 Tablespoons drained capers
- 1/4 cup julienned fresh basil leaves
- Kosher salt and freshly ground black pepper
- 32-36 (1/4-1/2" thick) baguette slices
- 4-5 ozs. Gorgonzola cheese, at room temperature
Spinach Balls

Squeeze spinach dry after cooking
- 2 packages chopped frozen spinach, cooked
- 2 cups herbed stuffing mix
- 1 large onion, diced
- 4 eggs
- salt to taste
- 1/2 cup grated Parmesan
- 3/4 cup melted butter
- 1 1/2 teaspoon thyme
- 1/2 garlic clove, minced
Caramel Butter-Pecan Bars

YIELDS 4 DOZEN. Have not tried
- 2 cups all-purpose flour
- 1 cup packed brown sugar
- 3/4 cup cold butter, cubed
- 1 1/2 cups pecans, chopped
- 1 jar (12 ounces) caramel ice cream topping, warmed
- 1 package (11 1/2 ounces) milk chocolate chips
Mini Carrot Custards

1. Preheat oven to 325 degrees
- 3 large eggs, lightly beaten
- Pinch salt
- 1 cup cooked, mashed carrots, cooled (about 4)
- 1 cup half and half
- Dash of tobacco sauce
- 3 Tablespoons unsalted butter, melted
Mixed Berry Sangria (Carol's)

In large pitcher, mix wine, juice and rum; add fruit
- 1 bottle (750 ml) sparkling white wine
- 2 1/2 cups white cranberry juice
- 2/3 cup light or coconut rum
- 1/3 each fresh blackberries, blueberries and raspberries
- 1/3 cup chopped fresh strawberries

- 1 cup water

1. Peel eggplant. Dip slices in flour and fry
- 1 eggplant
- 1 large onion, chopped
- 1/2 cup beef boullion
- 1 cup tomato juice
- 1 can tomato paste
- 2 cups ground lamb (1 pound)
- 5 Tablespoons butter
Cream of Spinach Soup

Combine spinach, onions and stock in a saucepan, and turn heat to medium high
- 1 pound spinach, well washed, thick stems trimmed
- 3 spring onions, or 3 bunches of scallions, trimmed and roughly chopped
