- 1 pkg. Nestle Toll House refrigerated choc. chip cookie dough (16.5 oz.)
- 1 cup walnuts, chopped
- 1 1/2 Tablespoons butter or margarine
- 1 Tablespoon packed brown sugar
- 1 can (12 oz.) evaporated lowfat milk
- 1 cup chocolate chips
- 1 cup powdered sugar
- 2 squares (1 oz. each) baking chocolate
- 2 Tablespoons butter or margarine
- 2 Tablespoons vanilla extract
- 1 1/2 quarts vanilla ice cream, softened

- 2 ounces (squares) unsweetened chocolate
- 1 Tablespoon butter
- 1/3 cup boiling water

Bay Scallops with Cauliflower and Almonds

- 1 1/2 heads of cauliflower, 1 head cut into rough 1" pieces
- 1/2 cup milk
- 4 cups water
- 2 Tablespoons olive oil
- 2 cloves garlic
- 2 Tablespoons chopped mixed herbs (tarragon, parsley and/or chives)
- 3 Tablespoons toasted almonds, chopped
- Salt, to taste
- 2 Tablespoons butter, browned, plus 1 teaspoon uncooked butter
- 1 teaspoon caper pickling liquid
- 2 pounds bay scallops
- 1 sprig thyme
- Juice from half a lemon

Place squash in a large saucepan or Dutch oven; cover with water
- Topping:
- 3 pounds butternut squash, peeled, seeded and cubed
- 3/4 cup milk
- 6 Tablespoons butter or margarine, melted
- 3 eggs, beaten
- 1/2 teaspoon vanilla extract
- 3/4 cup sugar
- 3 Tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg

Beef Roll Mozzarella

1. Combine meat, S&P, onion, egg and breadcrumbs in a large bowl
- 1 1/2 pounds lean ground beef

- 1 cup finely diced celery
- 1 cup finely diced carrots
- 1 cup finely chopped onions
- 1 teaspoon oregano
- 1/4 cup fresh basil
- 4 cups chicken broth
- 1/2 bay leaf
- 1/2 cup flour
- 1 cup grated Parmesan cheese
- 1/2 cup butter
- 2 cups half-and-half (substitute milk for less calories)
- 1 teaspoon salt
