- 1 1⁄4 cups all-purpose flour
- 3 ⁄4 cup cornmeal (Quaker brand preferred)
- 1 ⁄4 cup sugar
- 2 teaspoons baking powder
- 1 ⁄2 teaspoon salt
- 1 cup milk
- 1 ⁄4 cup vegetable oil
- 2 egg whites or 1 whole egg, beaten

Boil the 2 1/2 cups of water, take off the burner and add the baking soda and raisins
- 2 1/2 cups water
- 4 teaspoons baking soda
- 2 cups raisins
- 1 cup light brown sugar

- 1 pound lean ground beef (90% lean)

- 1 can (2-1/4 ounces) sliced ripe black olives, drained
- Taco Seasoning
- 1 box elbow pasta or corkscrew pasta
- 1 cup (4 ounces) cheddar cheese, shredded
- Sour cream (optional)
Asparagus Bundles

Preheat oven to 400 degrees
- 2 pounds fresh asparagus, ends trimmed
- 12 sliced bacon
- 1/2 cup light brown sugar
- 1/2 cup (1 stick) butter
- 1 Tablespoon soy sauce
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
Grilled Vegetables with Basil Dressing

Thread skewers with alternating pieces of eggplant, zucchini, squash, bell pepper and onion
- 1 small eggplant, sliced into thick rounds
- 1 zucchini, cut into thick, diagonal slices
- 1 yellow summer squash, cut into thick slices
- 1 red bell pepper, seeded and cut into eights
- 1 small red onion, sliced and cut into 8 segments
- 2 Tablespoons balsamic or red wine vinegar
- 1/4 cup olive oil
- 1/4 cup chopped fresh basil, or 1 Tablespoon dried
- 1/4 cup non-fat yogurt
- 2 Tablespoons mayo
- 1 Tablespoon minced fresh basil
- 1 teaspoons lemon juice
Skillet Rotini, Tomatoes and Cheese

In a large skillet, sauté and crumble sausage; add onions and pasta, sautéing until lightly golden
- 1 pound Italian sausage, casing removed
- 2 teaspoons olive oil
- 5 green onion, trimmed and cut into 1" diagonal pieces
- 4 cups cooked Rotini pasta
- 1 can (14.5 oz) diced tomatoes, drained
- 1 (15 oz container ricotta cheese
- 1/4 cup milk
- 1/4 cup fresh basil, slivered
- salt and pepper to taste
Pecan Sweet Potato Bake

In a large mixing bowl, combine the first seven ingredients; beat until light and fluffy
- Topping:
- 3 cups mashed sweet potatoes
- 2 eggs
- 1/2 cup sugar
- 1/4 cup half-and-half
- 1/4 cup butter, softened
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
- 1/2 cup packed brown sugar
- 2 Tablespoon flour
- 1/4 cup cold butter
- 1/2 cup chopped pecans

- 2 cloves garlic
- 3 stalks celery

- 3 Tablespoons olive oil
- 2 Tablespoons vinegar
- 1 Tablespoon lemon juice
- 1 Tablespoon chives
- 1 teaspoon salt
- 1 can V-8
