Florida Lime Pie (Carol's)

In the top of a double boiler, mix egg yolks, sugar and lime juice
- 3 egg yolks beaten
- 1/3 cup sugar
- 1/4 cup lime juice
- 1 1/2 teaspoon grated lime rind
- 1 1/2 cups heavy cream
- green food coloring
- 9 " graham cracker crust
Corn Pudding

Cook the onion slowly in the butter until soft but not brown
- 1 onion, chopped
- 1 Tablespoon butter
- 1 can corn (about 1 pound), drained--but reserve liquid
- 1 teaspoon sugar
- salt and pepper
- 3 eggs
- enough milk to make 1 1/2 cups of liquid when added to the liquid
- from the corn

- 1 1/2 quarts of chicken broth
- 1 egg
- 2 Tablespoon cold water
Slow Cooked Italian Chicken and Mushrooms

In a large sauté pan, warm 2 tablespoon oil over medium heat
- 2 pounds chicken thighs, boneless and skinless
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 Tablespoons olive oil, divided
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 red bell pepper, sliced
- 1 onion, sliced thin
- 1/2 cup Marsala wine (or chicken stock)
- 1 can (14.5 oz) diced tomatoes, in juices
- 2 Tablespoons capers, drained
- 1/2 cup currants
- 2 Tablespoons fresh basil (or 2 teaspoons dried)
- 2 Tablespoons fresh parsley (or 2 teaspoons dried)
