- Crust:
- 12 graham crackers
- 6 Tablespoons melted unsalted butter

- 1/3 cup sugar
- /4 cup lemon juice
- 2 teaspoons finely grated lemon peel
- 1-8 oz. package of cream cheese, room temp
- 1/2 cup whole milk ricotta
- 1 large egg
- Topping:
- 1/3 cup lemon curd
Mussels Marinara

1. Steam the mussels. Set aside the mussels and broth
- 32 steamed mussels
- 2 tsp. olive oil
- 1 medium onion, peeled & chopped
- 2 large shallots, peeled & minced
- 1 jalapeno pepper, stemmed, seeded, & minced
- 6 large tomatoes, chopped
- 2 tsp. fresh rosemary, chopped
- 2 tsp. salt
- 1 dash pepper
