Butterfly Franks

Cut franks into 4 pieces. Cut a 1/4" cross into each end
- 1 pound franks
- 3/4 cup barbeque sauce
New England Chicken Chowder (Julia Child)

Start out by sautéing the onions in the butter
- For chowder base:
- 4 cups sliced onions
- 2 Tablespoons butter
- 2 Tablespoons flour
- 4 cups warm chicken stock
- 4 cups of sliced "boiling" potatoes
- herb bouquet (4 parsley sprigs, 1/2 bay leaf, 1/2 teaspoon thyme (wrapped in cheesecloth)
- S & P as needed
- For chicken chowder:
- 6 boneless chicken thighs or 3 medium chicken breasts
- 1/2 cup sour cream (optional)
- 1/4 cup chopped fresh parsley and/or chives
Breadpudding (Grammy's)

Scald the milk. Pour over the bread cubes
- 4 cups milk
- 2 cups bread cubes
- 3 beaten eggs
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 cup raisins

Blueberry Sour Cream Coffee Cake

In a large mixing bowl, cream butter and sugar
- Filling:
- 3/4 cup butter, softened
- 1 1/2 cups sugar
- 4 eggs
- 1 teaspoon vanilla
- 3 cups flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (8 oz) sour cream
- 1/4 cup brown sugar
- 1 Tablespoon flour
- 1/2 teaspoon cinnamon
- 2 cups fresh or frozen blueberries
- Glaze:
- 1 cup confectioners sugar
- 2-3 Tablespoons milk

- 1 pound bulk pork sausage
- 2 tablespoons butter
- 1 large onion, chopped
- 1 cup sliced fresh mushrooms
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 12 large eggs
- 2 cups 2% milk
- 1 cup (4 ounces) shredded Swiss cheese
- 1 cup (4 ounces) shredded sharp cheddar cheese

Mix flour, undissolved yeast, sugar and salt in a large bowl
- 3 1/4 cups flour
- 1 envelope Rapid-rise yeast
- 1 Tablespoon sugar
- 1 teaspoon salt
- 1/4 cup extra virgin olive oil, divided
- 1 2/3 cup very warm water
- 2 Tablespoons grated Parmesan cheese
- 1 Tablespoon Italian herb seasonings
Reuben Brunch Casserole (Mom's Favorite)

1. Grease 9 X 13 inch glass baking dish
- 10 slices Rye Bread (Cut into 3/4 inch cubes)
- 1 1/2 lbs. Cooked Corned Beef (could be decreased to 1 lb.)
- 2 1/2 cups Shredded Swiss Cheese (10 oz.)
- 6 Eggs (slightly beaten)
- 3 cups Milk
- 1/4 tsp. Pepper
