CRANBERRY NUT BARS

Preheat oven to 350°F. Grease an 9 x 13-inch baking pan
- 4 eggs
- 2 cup sugar
- 2 cup flour
- 2/3 cup butter or margarine, melted
- 2 1/2 cups Ocean Spray® Fresh or Frozen Cranberries
- 1 cup chopped walnuts
Strawberry Spinach Pasta Salad with Orange Poppy Seed Dressing

Instructions 1.Combine all dressing ingredients in a jar, cover, and shake well
- 8 ounces penne noodles, cooked according to package directions
- 2 cups packed fresh baby spinach leaves
- 1 cup sliced strawberries
- 1 cup pineapple chunks
- 1/4 cup dried cranberries, or dried blueberries
- 1/2 cup salted cashews, or other nut like pecans or walnuts
- orange poppy seed dressing
- 1/2 cup extra virgin olive oil
- 1/3 cup apple cider vinegar
- 1/4 cup plain greek yogurt
- 1 tablespoon dijon mustard
- 3 tablespoons honey
- 1/3 cup orange juice
- 2 teaspoons poppy seeds
- optional: pinch of salt and pepper

Preheat 350 degrees toast nuts for 8 minutes
- Alternatives:
- 1 cup chopped nuts
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1/3 cup canola or neutral tasting oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1 medium golden delicious apple, unpeeled diced into 1/4 " pieces
- 1/2 cup dried cranberries
- 1/2 c shredded coconut
- 1/4 c cacoa nibbs
- 1/2 c applesauce instead of apples
- 1/2 c brown sugar
- other possibilities: almond butter, chia seeds, goji berries

- 1/2 c light or dark corn syrup

Caprese stuffed garlic butter portobellos

1.Preheat oven to grill/broil settings on high heat
- Mushrooms:
- Garlic butter
- 2 tablespoons butter
- 2 cloves garlic , crushed
- 1 tablespoon freshly chopped parsley
- 5-6 large Portobello Mushrooms , stem removed, washed and dried with a paper towel
- 5-6 fresh mozzarella cheese balls , sliced thinly
- 1 cup grape (or cherry) tomatoes, sliced thinly
- fresh basil , shredded to garnish
- Balsamic Glaze: (or you can use store bought, or this recipe)
- 1/4 cup balsamic vinegar
- 2 teaspoons brown sugar (OPTIONAL)
