Zucchini Fritters Recipe

Fill a deep-fat fryer or skillet with oil to a 2-in

- 1/2 cup milk
- 1 egg, lightly beaten

- 1-1/2 teaspoons baking powder
- 1/2 of 1-ounce package ranch-style dip mix
- 2 cups (8 ounces) shredded zucchini

- 3 12oz whole boneless chicken breastsk skinned & halved
- Chili powder to taste
- Garlic salt, to taste
- 2 Tbsp vegetable oil

- 1 tablespoon fresh lime juice
- 1 teaspoon light soy sauce
- 1 garlic clove
Peach Glazed Chops

In a blender combine chopped peaches, lime juice, soy sauce, and chili sauce

- 1 medium lime, juiced (2 tablespoons)
- 1/2 cup reduced-sodium soy sauce
- 1 tablespoon Asian chili sauce (Sriracha sauce)
- 2 cloves garlic
- 4 center-cut pork chops, about 1 inch thick
- 4 peaches, halved and pitted
- 1 red sweet pepper, quartered
- 1 tablespoon honey
- 1/2 bunch parsley or basil, coarsely chopped
Corn and Blueberry Salad

- 6 fresh sweet corn, husked
- 1 cup fresh blueberries
- 1 cucumber, sliced
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeno pepper, seeded and finely chopped*
- 2 tablespoons lime juice
- 2 tablespoons olive oil
