- ■1/2 teaspoon Kosher Salt
- ■ Freshly Ground Black Pepper

- ■4 whole Carrots, Washed, Unpeeled, And Roughly Sliced

Black Bean, Corn and Avocado Salad

- 1 can rinsed and drained black beans
- 1 can mexi-corn, rinsed and drained
- 2 avocados
- 1 cucumber, diced
- 1/2 red onion, diced
- Juice of 1 lime
- 2 T olive oil
- 2-3 sprigs of cilantro
- 1/2 tsp cumin
- Salt and Pepper to taste
Tzatziki - Cucumber Yogurt Sauce

Process in food processor, adding salt & pepper to taste
- 3 cups Greek Yogurt (or regular plain yogurt, strained as described above)
- juice of one lemon (about 3 T)
- 1 garlic clove, chopped
- 2 medium cucumbers, seeded and diced
- 1 about 1 T kosher salt for salting cucumbers
- 1 T finely chopped fresh dill (can substitute mint leaves for a slightly different version)
- Kosher salt and fresh ground black pepper to taste
