Emeril's Apple and Cranberry Crisp

Step 1 Preheat oven to 375 degrees
- Crisp Topping:
- Unsalted butter, for baking dish
- 2 1/2 - 3 pounds sweet, firm apples, such as Gala or Braeburn, peeled, cored, and cut into 1/2-inch dice
- 12 ounces cranberries (fresh or frozen)
- 1/2 cup sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon grated orange zest, plus 1 tablespoon fresh orange juice
- Cook's Note
- Fresh or frozen cranberries work well here (no need to defrost the frozen ones before using). You can add 1/3 cup chopped walnuts to the topping, if you like.
- 6 tablespoons butter, cut into small pieces
- 2/3 cup all purpose flour (spooned and leveled)
- 2/3 cup rolled oats
- 3/4 cup packed light-brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Coconut Lime Butter Cookies

- Cookies:
- 4 sticks (1 pound) salted butter, softened
- 1 1/2 cups granulated sugar
- 2 large egg yolks
- 1 tablespoon lemon zest
- 1 tablespoon lime zest
- 4 cups all-purpose flour
- 2 tablespoons lemon or lime juice (or 1 tablespoon of each)
- 1/2 teaspoon coconut extract
- Icing:
- 3 cups powdered sugar, plus more if needed
- 2 tablespoons cream of coconut
- 1 tablespoon lemon zest, plus extra for decorating
- 1 tablespoon lime zest, plus extra for decorating
- 1 tablespoon milk
- 1 teaspoon coconut extract
- Dash of salt
- 1 large egg white
- Juice of 1 lemon, plus more if needed
- Juice of 1 lime, plus more if needed
Applesauce Cake

- 3 cups unsweetend applesauce
- 1 cup shortening
- 4 tsp baking soda
- 4 cups flour
- 2 1/2 cups sugar
- 2 heaping Tab cocoa
- 1 cup walnuts, chopped
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp allspice
- 1 tsp nutmeg
- 1 tsp cloves
- 1 cup chopped raisens (optional)

- 1/2 t. cayenne pepper

- 3 pounds beef sirloin

- 1/2 cup Peanuts
- 2 Eggs
- 1/2 pound Boneless Skinless Chicken Breast (thinly sliced)

- 1 cup Carrots (julienned)
- 1 cup Bean Sprouts
- 4 Scallions (thinly sliced)
- 1/4 cup Cilantro (roughly chopped for garnish)
- 2 Limes (cut into wedges for garnish)
- 1/2 cup Water
- 1/4 cup Light Brown Sugar
- 1/4 tablespoon fresh Lime juice

Fresh Cucumber Carrot Salad

- 2 carrots, grated
- 1 small or 1/2 large shallot, chopped
- 2 tablespoons rice wine vinegar
- 2 teaspoons Sriracha

Pumpkin Creme Brulee

Directions: 1.Heat cream, pumpkin puree and pumpkin pie spice on the stove
- 2 cups cream
- 1/4 cup canned pumpkin puree
- 1 tsp pumpkin pie spice*
- 1/2 cup Crosby’s Fancy Molasses
- 6 egg yolks
- Substitute 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/4 tsp ground nutmeg and 1/8 tsp ground cloves.
