Wilted Spinach Salad with Dried Cranberries

1. Quarter and thinly slice the red onion
- Salad:
- 1 small red onion, vertically sliced
- 8-9 c. spinach leaves, washed and patted dry
- 4 oz. feta cheese, crumbled
- 1/4 c. dried cranberries
- 1 Tbsp. mint leaves, chopped
- 2 Tbsp. sherry vinegar
- Pinch of salt
- 6 Tbsp. olive oil
- black pepper, freshly ground
- Garlic Crostini:
- olive oil
- 1 large garlic clove
- 12 thin slices baguette or other artisanal bread
- 1/2 c. pecan halves, toasted and very coarsely chopped
POTATO SKIN POPPERS

Preheat the oven to 350 degrees
- 3 cups frozen, diced potatoes (or hash browns)
- 2 cups shredded cheddar cheese
- 2 cups Daisy Brand Sour Cream
- 3/4 cup cooked bacon pieces
- 1/3 cup chopped green onions
- 1 dash salt & pepper to taste
- 14 8-inch flour tortillas
- 2 tablespoons butter, melted
Dixie Peanut Brittle (Stovetop)

1. In a heavy saucepan heat sugar, syrup, water and salt to a rolling boil
- 2 c. granulated sugar
- 1 c. light corn syrup
- 1/2 c. water
- 1/2 tsp. salt (optional)
- 3 c. raw shelled peanuts, skins on
- 2 Tbsp. butter
- 1 tsp. vanilla extract
- 2 tsp. baking soda

- 1 cup sugar
- 1/2 cup Karo® Light Corn Syrup
- 1/8 teaspoon salt

- 6 slices Monterey Jack cheese with peppers, sliced diagonally in half
- 1 avocado, pitted, peeled and thinly sliced
- Alfalfa sprouts, if desired

The syrup in this recipe was cooked in a 1000 watt microwave
- 2 +1/4 cup sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 1/8 teaspoon salt
- 2 egg whites
- 1 +1/2 teaspoon vanilla
- 1/2 cup pecan halves (for garnishing, optional)
Harvest Stuffed Cinnamon Rolls

1.Place loaf of dough on plate and let sit at room temperature until thawed
- Icing:
- 1 loaf frozen white bread dough (such as Rhode's)
- 1/4 Cup butter or margarine, softened
- 1 Cup brown sugar, packed
- 1 Tablespoon ground cinnamon
- 1/2 cup dried cranberries (can use raisins or dried cherries)
- 1/2 cup pecans, toasted
- 1 Tablespoon orange zest
- 3 ounce cream cheese, softened
- 1/4 Cup butter or margarine, softened
