Cake: 1. Heat oven to 350 degrees F
- Cake:
- 8 tablespoons Happy Cow unsalted butter, softened, plus some for pans
- 2 cups unbleached all-purpose flour, plus some for pans
- 1/4 cup unsweetened baking cocoa
- 1 cup sugar
- 2 large eggs, separated
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Dash of salt
- 1 1/4 cups Happy Cow chocolate milk
- Oreo Cream Filling:
- 8 ounces Happy Cow Cream Cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 2 cups Extra Creamy Cool Whip
- 16 Oreo cookies, coarsely crushed
- Chocolate Buttercream Frosting:
- 8 tablespoons Happy Cow unsalted butter, softened
- 4 cups powdered sugar
- 6 tablespoons Happy Cow chocolate milk
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened baking cocoa

- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt

Preheat oven to 350°. With electric mixer, cream butter, sugar, and brown sugar
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 cup fine graham cracker crumbs
- 1 tsp baking soda
- 1/8 tsp salt
- 1 (4.4 oz) Hershey’s Milk Chocolate Bar, cut in chunks
- 1 cup coarsely chopped graham crackers, chunks
Easy Butterscotch Pecan Cake Mix Cookies

1.Position an oven rack in the middle of the oven and preheat oven to 350F degrees
- ◾1 (18.25-ounce) package butter pecan cake mix
- ◾1/3 cup butter, melted
- ◾2 large eggs
- ◾1 1/2 cup butterscotch baking chips
- ◾1 cup chopped pecans
Cheesy Corn Chowder

Gather ingredients, chop and wash veggies, and open can of creamed corn
- 1 Small yellow onion, chopped
- 1/2 cup Carrots, chopped
- 3 stalks Celery, roughly chopped
- 1 medium Red bell pepper, roughly chopped
- 2 cups Idaho® Spuds™ Classic Flakes
- 2 cups low fat milk
- 1 cup water
- 2 Chicken bouillon cubes + 2 cups water OR 2 cups chicken broth
- 1 (15 oz) can creamed corn
- Pinch sweetener of choice
- Pinch Salt and Pepper (or to taste)
- 1/2 cup Grated low fat cheddar or mozzarella cheese
- 1/4 cup Grated parmesan cheese
- Optional: 2 cups chicken, cooked and shredded or chopped. Additional corn and/or cooked bacon, crumbled for topping.
