Three Beans and Three Peppers Salad

Remove the stems, seeds and ribs from the bell peppers and poblano chili
- 1 (15 ounce) can black beans, rinsed & drained
- 1 (15 ounce)can pinto beans, rinsed & drained
- 1 (15 ounce) can red or kidney beans, rinsed & drained
- 1 yellow bell pepper
- 1 red bell pepper
- 1 fresh poblano chili pepper
- 1/4 cup red wine vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 canned chipotle chili pepper in vinegar or in adobo sauce, stemmed, seeded and minced (optional)
- 2/3 cup olive oil
- 1 red (Spanish) onion, finely diced
Chocolate Cream of Coconut Cake

1.Preheat oven to 350*. Grease a 9x13 pan and set aside
- 1 chocolate cake mix
- 3 eggs
- 1/2 c. oil
- 1 1/4 c. water or cold coffee
- 1 can (15 oz.)cream of coconut
- 1 can (14 oz.) sweetened condensed milk
- 1 (8 oz.) container cool whip
- 2 c. shredded coconut, divided

- Filling::
- 1 package Fleischmann's® Simply Homemade® Country White No Knead Bread Mix
- 2/3 cup warm water (105˚ to 115˚F)
- 2 tablespoons butter OR margarine, melted
- 1 egg, beaten
- 1/4 teaspoon pure vanilla extract
- 3 tablespoons butter OR margarine, softened
- 1/2 cup sugar
- 2 teaspoons ground cinnamon
- Frosting::
- 1-1/2 cups powdered sugar
- 1/2 teaspoon pure vanilla extract
- 1 to 2 tablespoons water OR milk

Prepare Lemon Curd: In a small saucepan, whisk together lemon zest, lemon juice, and sugar
- Homemade Lemon Curd:
- 1 tsp fresh lemon zest
- 1/2 cup strained fresh lemon juice
- 1/2 cup sugar
- 3 large eggs
- 1/4 cup butter, cut into small pieces
- Vanilla Wafer Almond Crumb Crust:
- 1 1/2 cups vanilla wafer cookie crumbs
- 3/4 cup finely ground toasted almonds
- 2 tsp lemon zest
- 1/8 tsp of salt
- 7 tbsp butter, melted and cooled
- Lemon Cream Cheese Filling:
- 2 (8-oz) packages cream cheese, room temperature
- 1 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/2 tsp vanilla extract
- Reserved Lemon Curd (from above)
- Garnish:
- 1/2 cup heavy whipping cream
- 1/4 cup confectioners’ sugar
- 1/2 tsp vanilla extract
- 12-15 fresh raspberries
- 1 small lemon, cut into thin slices and quartered
Candied Orange Sweet Potatoes

- 2 cans (15 oz) Princella Cut Sweet Potatoes
- 1 Orange, finely chopped
- 1/2 cup Butter, melted
- 1/2 cup Brown Sugar
- 2 Tbsp. Orange juice
- 1 tsp Vanilla
- Cinnamon
Monster Cookie Bars

Preheat oven to 350 degrees
- 3/4 cup butter, room temperature (1 1/2 sticks)
- 1 cup light brown sugar, packed
- 14 oz. can sweetened condensed milk
- 1/2 cup creamy peanut butter
- 1 cup flour
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 2 cups quick cooking oats
- 1/2 cup mini chocolate chips
- 1/2 cup regular sized chocolate chips
- 1/2 to 3/4 cup m&m’s (approximately 2 1/2 1.69 oz. bags)
