Chicken, Sausage & Bean Stew

Heat the oil in a large, heavy pan over medium-high heat
- 2 tbsp. vegetable oil
- 4 boneless, skinless chicken breast portions, cubed
- 8 oz. coarse-textured pork sausage, cut into large chunks
- 5 *Drier's* Polish halved
- 3 carrots, sliced finely
- 1 garlic clove, chopped very finely
- 1 tsp. dried thyme
- 1/4-1/2 tsp. dried chili flakes
- 14 oz./400g canned chopped tomatoes
- 14 oz./400 g canned cannellini beans drained and rinsed
- 2/3 c. chicken stock
- salt and pepper
- chopped fresh flat leaf parsley, to garnish
Spanish Ham & Rice One-Pot

Heat the oil in a large heavy pan over medium heat
- 2 tbsp. olive oil
- 1 onion, chopped finely
- 1 red bell pepper, deseeded and chopped finely
- 12 oz./350 g piece of drier’s ham, cubed
- 2 tsp. paprika
- 14 oz./400 g canned chopped tomatoes
- 1 c. long grain rice
- 2 c. hot chicken stock
- salt and pepper
- 3/4 c. frozen peas
Macaroni & Cheese 4 (slow cooker)

Mix all in crock pot and cook either 4 hours on low or 2 - 2 1/2 hours on high
- 8 oz. box of macaroni noodles
- 1 stick of butter melted and cooled
- 1 can evaporated milk
- 1 can regular milk
- 3 cups or more of N.Y. Extra Sharp grated Cheddar Cheese
- Salt and pepper
- 2 eggs beaten
Mac 'n Cheese 1

1. Preheat oven to 375°F
- 8 tablespoons (1 stick) unsalted butter, plus more for casserole
- 6 slices white bread, crusts removed, torn into 1/4- to l/2-inch pieces
- 5 1/2 cups milk
- 1/2 cup all-purpose flour
- 2 teaspoons coarse salt, plus more for water
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 4 1/2 cups (about 18 ounces)N.Y. sharp white cheddar cheese grated
- 2 cups (about 8 ounces) grated Gruyère or 1 1/4 cups (about 5 ounces) grated Pecorino Romano cheese
- 1 pound elbow macaroni
Beef, Mushroom & Rice Casserole

Heat the oil in a high-sided, lidded casserole over medium-high heat
- 3 tbsp. olive oil
- 14 oz. ground beef
- 1 onion, chopped finely
- 1 bell pepper, deseeded and chopped finely
- 2 1/4 c. sliced mushrooms
- 2 tbsp. tomato paste
- 1 1/4 c. long grain rice
- 2 1/2 c. hot beef stock
- salt and pepper
- 3/4 c. freshly grated N.Y. white cheddar
Ham & Asparagus Casserole

- 4 eggs
- 4 oz pack. almond slivers
- 2 T. butter,plus extra for topping
- 1/2 C. seasoned bread crumbs, plus extra for topping
- 1 lb.fresh asparagus, trimmed
- 2 C. cubed *Drier's* ham
- 1/2 C. grated New York cheese
- 3 T. tapioca
- 3 T. chopped green onions with tops
- 1/4 C. chopped mushrooms
- 3 T. minced red bell pepper
- 2 T. fresh snipped parsley
- 1 T. lemon juice
- 1/2 C. milk
- 10 1/2 ounce can of cream of mushroom soup
Cheesy Spinach Main Dish

Brown meat in oil stirring to prevent burning
- 1 lb. very lean ground beef
- 1 tbsp. salad oil
- 1 tsp. each salt, pepper, garlic powder
- 1 yellow onion, finely chopped
- 1/2 lb. fresh mushrooms, sliced
- 1 can (8 oz.) tomato sauce
- 1 carton (8 oz.) commercial sour cream
- 1 tsp. each basil and oregano, crushed
- 8 oz. cottage cheese
- 2 pkgs. (10 oz. each) frozen chopped spinach thawed
- 1/2 c. grated parmesan cheese
- 1/2 c. grated longhorn cheese
- 1/3 c. grated parmesan cheese
Creamy Potatoes with Bacon

Directions: 1. Put the potatoes in a large pot and cover with water
- 5 pounds Yukon Gold potatoes, peeled and cut into 3-inch chunks
- Salt
- 1 pound *Drier's* thickly sliced bacon
- 2 sticks unsalted butter, softened
- 1 cup heavy cream, warmed
- 8 oz. cream cheese
- 1/2 cup minced chives
- Salt and freshly ground pepper
Chicken And Spinach Salad With Bacon Dressing

Place chicken and spinach in large bowl
- 3 cups cooked chicken cut short strips (from 1 purchased roast chicken)
- 1 bag baby spinach leaves - (6 oz)
- 6 *Drier's* bacon slices cut 1/2" pieces
- 1/2 medium red onion sliced paper-thin
- 3 tablespoons balsamic vinegar
Ham,Spinach and Mostaccioli Casserole

Cook pasta according to package directions,drain, and rinse with cold water Melt butter, add onions and garlic
- 8 oz. pack. mostaccioli, cut ziti, or elbow macaroni
- 3 T. butter
- 3 med. onions cut thin or 5 med leeks sliced
- 2 cloves garlic minced
- 1/4 C. all-purpose flour
- 1/2 t. dried thyme, crushed
- pepper
- 1 1/2 C. half and half, light cream or milk
- 1 1/2 C. chicken broth
- 1 1/2 C. cubed *Drier's* ham
- 1 10 oz. pack frozen chopped spinach,thawed and drained
