Ingredients

  • 1

    tablespoon garlic -- minced

  • ½

    cup olive oil

  • 2

    pounds cherry tomatoes

  • 4

    oz soft, mild chevre cheese -- (Montrachet)

  • ½

    cup fresh basil

  • 1

    loaf focaccia or French bread

Directions

Steep garlic in olive oil at least 1/2 hour. Pre-heat oven to 400 degrees. Wash and stem tomatoes and cut in half. Put tomatoes in shallow baking dish. Pour the garlic/olive oil mix over the tomatoes and toss lightly. Bake 10 minutes. Sprinkle with 1/2 inch chunks of cheese and slivered basil. Stir gently. Serve with warmed bread.
