- 1 package brownie mix
- Eggs called for on box
- Oil called for on box
- Water called for on box
- Chocolate chip cookie dough (refrigerated or homemade)
Pumpkin nut bread

- 2 C. flour (lightly spooned into measuring cup)
- 1 C. packed brown sugar
- 1 T. baking powder
- 1 t. cinnamon
- 1/4 t. salt
- 1/4 t. baking soda
- 1/4 t. nutmeg
- 1/8 t. ground ginger OR ground cloves
- 1 C. canned pumpkin
- 1/2 C. milk
- 2 eggs
- 1/3 C. shortening
- 1/2 C. walnuts, chopped
- 1/2 C. raisins

- 2 2 packages 2 (8-ounce) packages cream cheese, softened
- 1 1 1 cup granulated sugar
- 3 3 3 eggs
- 1 1 1 teaspoon pure vanilla or almond extract
- Fresh berries and mint leaves, for garnish

Kickin' chicken chili

Made the in the same way as traditional chili with ground beef, but just use chicken
- SPICES:
- 3 large chicken breasts, cubed; or breast meat from leftover rotisserie chicken, at least 2-3 C.
- 1 medium onion, chopped
- 4 cloves garlic, pressed or chopped
- EVOO
- 1 29 oz. can tomato puree'
- 1 C. chicken stock
- 2-3 chile' peppers of your choice (I used whatever the store had, which was jalapeno & Peperoncino)
- 6 plum tomatoes, seeded & diced
- 2 cans of beans (I used 1 can dark red kidney & 1 can black beans), drained and rinsed
- 1 bay leaf
- 2-3 t. Worcestershire sauce
- 2 T GOYA Sofrito
- GOYA Adobo seasoning
- Chili powder
- Paprika
- Cayenne pepper
- Red pepper flakes
- Onion powder
- Oregano
- Basil
- Scallions, chopped
- Cilantro sprigs (add toward the end of recipe to keep its strong flavor)
- Salt & pepper
- GARNISH:
- Shredded cheese, Mexican or cheddar or other
- Scallions or onions
Cream o' mushroom chicken dinner

Cream of mushroom chicken with sauteed green beans, home fries and cucumber salad
- Chicken:
- 8-10 chicken tenders (or 4 boneless breasts)
- Seasoned salt (or all purpose seasoning salt free) & pepper
- EVOO
- 1 can Campbell's Cream of Mushroom soup
- Water
- Green beans:
- 1 lb. fresh green beans, trimmed
- Flavored olive oil (of your choice), enough to coat bottom of pan generously
- Home Fries:
- 1 package baby red potatoes (or your choice of potato) about 1-2 lbs.
- 1 small onion, large cuts
- 1 clove garlic, chopped (I have also used 1 small shallot in place of the garlic)
- EVOO
- Sesame oil
- S&P if desired
- Cucumber Salad:
- 1 large cucumber, peeled (& seeded if desired, or use English cuke)
- 1 medium onion
- Mayonnaise, about 2-3 T.
- S&P to taste
Greek Feta and Cucumber Salad

Slice cucumbers as thinly as you can
- 2 English cucumbers (also known as seedless or hothouse)
- Salt
- 1 cup crumbled feta cheese
- 2 tablespoons fresh oregano leaves
- 1 clove garlic, minced
- 1 shallot, minced
- Zest and juice of 2 lemons
- 2 ounces extra-virgin olive oil

- 2 cups old-fashioned oatmeal
- 1 cup sliced almonds
- 1 cup shredded coconut, loosely packed
- 1/2 cup toasted wheat germ
- 3 tablespoons unsalted butter
- 2/3 cup honey
- 1/4 cup light brown sugar, lightly packed
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon kosher salt
