Delicious taste of summer in a pie
- FILLING:
- Combination Vegetable Shortening & Butter Pastry Recipe (from whatscookingamerica.com)
- 2 1/2 cup all-purpose unbleached flour, plus extra for rolling
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1/2 cup chilled vegetable shortening
- 1/2 cup cold unsalted butter, cut into 1/4-inch pieces
- 6 to 8 tablespoons ice water
- 2 cups fresh or frozen sliced peaches, thawed
- 1-3/4 cups pitted fresh dark sweet cherries or 1 can (15 ounces) pitted dark sweet cherries, drained
- 1 cup fresh or frozen blueberries, thawed
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1-1/2 cups sugar
- 1/4 cup all-purpose flour
- 1/4 cup quick-cooking tapioca
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1 tablespoon butter
Garlic roasted chicken dinner

My new favorite dinner: Garlic roasted chicken, green beans, pan roasted potatoes & bruschetta
- 2 T extra-virgin olive oil
- 4 skin-on, boneless chicken breasts, or 8 skin-on thighs (about 1 1/2 lbs.)
- Salt and freshly ground pepper
- 2 cloves garlic, peeled
- 2 T white wine vinegar
- 3 T water

- 9 inch pie crust/shell (It says not to bake it, but I bake mine for about 5 minutes)
- 3/4 C. sugar
- 2 T. flour
- 1 t. cinnamon
- 1/8 t. nutmeg
- 1/4 t. salt
- 6-7 C. sliced & peeled apples
- Crumb topping:
- 1/2 C. butter, softened
- 1/2 C. light brown sugar, firmly packed
- 1 C. flour

- 3 1/2 lb of beef shoulder or boneless chuck roast (look for a piece that is well marbled with fat for best results)
- 2 Tbsp olive or grapeseed oil
- Salt, pepper, italian seasoning to taste
- 2 large yellow onions, thickly sliced, lengthwise (root to tip), about 4 cups sliced onion
- 4 cloves of garlic, peeled
- 1/2 cup of red wine
- 1 bay leaf
- Several carrots, peeled and cut lengthwise

This is my "get rid of everything in the fridge or it's going to go bad" dinner
- Baby red potatoes, about 12, quartered
- 2 packages sliced mushrooms
- 1/4 About 1/4 small bag of baby carrots, quartered
- 1 medium zucchini, thick slices, then quartered
- 1/2 large yellow onion, made into chunky pieces
- 1 shallot, chopped
- 2 cloves garlic, chopped
- 10 About 10 chicken tenders, cubed
- Salt & pepper
- All purpose seasoning (I have a generic version of Emeril's Essence)
- EVOO
- Water

- 1 (8-ounce) package corn muffin mix (recommended: Jiffy)

- White onion
- Feta cheese crumbles

- Croutons (I used my homemade ones-mmm!)
