- Sarah Fit Granola Bars (Gluten Free, High Protein)
- 10 Time: 10 minutes
- 25 Time: 25 minutes
- ■1/2 cup Unsweetened Vanilla Almond Milk (may use regular milk, coconut milk, soy milk)
- ■2 tbsp Honey*
- ■1 medium Banana
- 1/2 1/2 cup of Old Fashioned Rolled Oats
- ■1/2 cup Almond Meal*
- ■3 tbsp Coconut, shredded raw
- ■2 tsp Cinnamon
- ■2 servings Vanilla Protein Powder like Jay Robb Whey or Vega Sport Vanilla
- ■1/4 cup Almonds
- ■1/4 cup Golden Raisins
- 25 8-10 the dish, the thinner the bars and less cooking time. Bake for 25 minute or until center is firm. Cut into 8-10 size servings.
- Roomie requested whole almonds. I used raw and they toasted up nicely in the bars. You can also use cranberries and walnuts, or cashews and chocolate!

Chicken Tortellini Soup

Hearty soup especially on those cold fall & winter days
- 1 26 oz. container Swanson chicken stock
- 1 9oz. package Buitoni 3 cheese tortellini
- 2-4 cloves garlic, finely chopped
- 1-2 slices yellow onion, diced
- 4-6 plum tomatoes, seeded & diced with 1/2 C. to 3/4 C. water & 1/4 t. salt (you can also use canned diced tomatoes, you just can't control the salt)
- 2 large handfuls baby spinach, coarsely chopped
- 1-2 T. olive oil (I use light olive oil, not EVOO)
- Leftover rotisserie chicken or other leftover chicken
- Grated Parmesan cheese
- Sliced mushrooms, if desired (changes the taste quite a bit) anywhere from 8-16 oz. package
My "famous" chili dip

Quick easy dip or meal. My husband loves it, so it's gotta be good!!!!
- 3 lbs. ground beef or turkey
- 6 plum tomatoes, seeded & chopped
- 1 can black beans, drained & rinsed
- Scallions, chopped
- Cilantro, chopped
- Sour cream
- Mexican blend shredded cheese
- Chili seasoning packets, no more than 1 per lb. of meat (I use French's Chili-O)
- Chili powder, paprika, minced onions or onion powder (if desired-see recipe)
- Water

- 4 adapted from Anja's Food 4 Thought
- 8-10 8-10 bars
- 2 2 2 ripe bananas
- 1/2 1/2 1/2 cup nut butter (peanut, almond, cashew), preferably all natural
- 1/2 1/2 1/2 cup roughly chopped nuts (almonds, walnuts, pistachio, cashew, pecan, macadamia)
- 1/4 1/4 1/4 cup seeds (sunflower, sesame, poppy, chia)
- 1 1 1 cup rolled oats
- 1/4 1/4 1/4 cup dried fruit (cranberry, cherry, apricots, papaya, mango, raisin, strawberry, blueberry)
- 1/4 1/4 1/4 cup chocolate chips or cocao nibs, optional
- 1/2 1/2 1/2 teaspoon cinnamon, optional
- 1/4 1/4 1/4 cup unsweetened shredded coconut, optional
- to 350˚F. 8x8 350˚F. Line an 8x8 baking pan with parchment. I haven't made these without parchment because I think they would really stick without it. Plus it makes for really easy clean up anyways.
- In a large bowl mash the bananas with the back of a fork. Stir in the nut butter until everything is well combined.
- Add the oats, chopped nuts, seeds, dried fruit, chocolate, cinnamon, and coconut if using. Stir well until everything is well combined. The batter will be very, very wet and you'll wonder if this will even bake, it will.

- ■One Ripe Banana
- ■Unsweetened Shredded Coconut
- ■1/4 cup flaxseeds
- ■1 cup of your choice of nuts
- ■1/2 cup of your choice of dried fruit
- ■cinnamon
- How:
