Preheat the oven to 300 degrees F

  • 3 pounds rump roast
  • Kosher salt and freshly ground black pepper
  • 3 tablespoons olive oil
  • 1 carrot, cut into 1-inch chunks
  • 1 small celery root, peeled and cut into 1-inch chunks
  • 1 onion, coarsely chopped
  • 2 cloves garlic, smashed
  • 1 cup red wine
  • 2 cups Yia Yia's Sunday Sauce, recipe follows
  • 2 bay leaves, preferably fresh
  • 1 1/2 pounds dried rigatoni, for serving

  • 2 chicken breasts, in strips then in half
  • 2 8oz. pkgs. sliced white mushrooms

  • 7-8 scallions, chopped
  • 2 cooked egg whites (optional)
  • 2 cloves garlic, chopped
  • Olive oil
  • Low sodium soy sauce
  • Sesame oil

  • For glaze
  • 1/3 C. packed brown sugar
  • 1/3 C. balsamic vinegar
  • 1 t. finely chopped garlic
  • 1 t. chopped fresh rosemary leaves (I don't like too much rosemary on my chicken so I use 1t. of McCormick Italian herb grinder instead. Use any herb you like.)
  • For meat
  • 1/2 t. salt
  • 1/4 t. pepper

I love Paula Deen's rice pilaf recipe, but I wanted something different, so I added my own spin and tried this

  • My addition to the recipe:
  • Paula Deen's rice pilaf
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 1 1/2 cups long grain American basmati rice (for testing purposes, we used Texmati)
  • 2 (14.5-ounce) cans chicken broth
  • 1 tablespoon chopped flat leaf parsley
  • Wild rice, cooked
  • Chopped sauteed mushrooms, in butter & EVOO

  • 1 15.5 oz. can GOYA dark red kidney beans (or other brand), NOT drained
  • 4 heaping soup spoons of your favorite marinara sauce (I used Ragu, but use whatever smooth tomato sauce you like)
  • 1/2 to 3/4 can of water
  • 1 t. Italian seasoning (or 1/2 t. dried basil & 1/2 t. oregano) I use McCormick Italian grinder mix
  • Small pasta (small shells, ditalini, pipette, elbows, etc.) cooked
  • Grated parmesan cheese (optional)
