- 4 tablespoons olive oil, divided
- 2 large skin-on, bone-in chicken breasts, bones removed (1 1/2–2 lb.)
- Kosher salt and freshly ground black pepper
- 2 cloves garlic finely chopped
- 1 teaspoon coriander seeds, chopped
- 1 teaspoon cumin seeds, chopped
- 1/2 teaspoon hot smoked paprika
- 1 medium shallot, sliced into rings
- 1/2 cup fresh cilantro leaves with tender stems
- 2 tablespoons (or more) fresh lemon juice
- 1/2 head escarole, torn into pieces
Maple-Cinnamon French Toast

1. Preheat oven to lowest setting (about 200°)
- 4 large eggs
- 1 1/2 cups 2% reduced-fat milk
- 2 1/2 tablespoons maple syrup
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 8 slices whole wheat bread
- 1 teaspoon butter or canola oil
- Warm Wild Blueberry Sauce
- Blueberries (optional)
Chicken with Buttered Snap Peas and Tender Lettuces

Heat oil in a large skillet over medium heat
- 2 tablespoons olive oil
- 1 3 1/2–4-lb. chicken, cut into 10 pieces
- Kosher salt and freshly ground black pepper
- 2 tablespoons unsalted butter
- 2 medium shallots, sliced into 1/4”-thick rings
- 6 oz. sugar snap peas (about 2 cups), strings removed, half halved crosswise, half thinly sliced
- 2 heads Little Gem lettuce, halved or quartered, or 1 head Bibb lettuce, torn into 3” pieces
- 3 tablespoons fresh tarragon leaves
- Lemon wedges (for serving)
Weekday Soba Noodle Salad

1. Cook soba noodles as per package directions
- 8 oz soba noodles
- 1 cup canned organic coconut milk
- 2 Tbsp. peanut butter
- 1 Tbsp. maple syrup
- 1 Tbsp. soy sauce
- 1 Tbsp. sesame oil
- 1 Tbsp. cilantro, chopped
- 2 tsp. crushed red pepper flakes
- 1 tsp. grated ginger
- 1/4 . tsp curry paste
- Sea salt and freshly cracked pepper to taste
- Garnish with green onions and salted peanuts
Chicken Empanadas

Heat oil, add onions, garlic, paprika and saute for about 5 minutes
- 2 Packages of Mini Gusto Discs (20 pieces in total)
- 4 medium size chicken cutlets, about a pound, roughly chopped
- 4 tablespoons of virgin olive oil
- 1 large onion, cut in half and thinly sliced
- 3 cloves of garlic, chopped
- 1 teaspoon red pepper flakes
- 2 tablespoons of Spanish paprika, mine comes from Andalusia.
- 1 tablespoon of cumin
- 1 small jar of roasted red peppers (about 2), roughly chopped.
- 15 Spanish olives, sliced.
- 1 bottle of your favorite wine.

- 1/2 pound country-style white bread, cut into 1-inch pieces (about 8 cups)

Mix the yeast and water in a small bowl
- 2 3/4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon white sugar
- 1 (1/4 ounce) packet active dry yeast
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1 dash ground black pepper
- 1 tablespoon vegetable oil
- 1 cup warm water (105-115 degrees)
- 2 tablespoons olive oil
