Mediterranean Basmati Salad

This healthy dish works as a light lunch or a side dish
- 2 sun-dried tomatoes, packed without oil
- 1/4 cup hot water
- 1 1/4 cups uncooked basmati rice
- 2 cups water
- 1/2 teaspoon salt
- 2/3 cup (2.5 ounces) feta cheese, crumbled
- 2 tablespoons dried currants
- 2 tablespoons chopped fresh mint
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 2 tablespoons pine nuts, toasted
Tiritas de Falda con Cilantro y Pimientos (Flank Steak Strips with Cilantro and Peppers)

1. Heat a few tablespoons of olive oil in a skillet, and sauté the flank steak in small batches
- 1/4 cup olive oil
- 1 lb. flank steak, cut into strips and seasoned with salt and pepper
- 1 white onion, julienned
- 1 teaspoon minced garlic
- 1/2 green bell pepper, julienned
- 1/2 red bell pepper, julienned
- 1/2 cup chopped fresh cilantro
Rotini Alfredo with Asparagus and Peas

In a large pot of boiling salted water, cook the pasta according to the package directions
- 1 lb. brown rice rotini or pasta of your choice
- Kosher salt
- 4 tsp. extra-virgin olive oil, divided
- 1 medium onion, chopped
- 5 cloves garlic, chopped
- 1 cup raw cashews
- 1 cup hot water
- Juice of one lemon
- 1 Tbs. tahini sauce
- 1 Tbs. Dijon mustard
- 2 Tbs. nutritional yeast
- 1/2 tsp. smoked paprika
- A pinch of nutmeg
- 1/2 tsp. Kosher salt (or to taste)
- 1/4 tsp. ground black pepper (or to taste)
- 1 cup unsweetened almond milk
- 2 Tbs. coconut butter spread (optional)
- 1 bunch scallions, chopped
- 1 bunch asparagus, chopped
- 1/3 cup frozen peas
- Fresh parsley, chopped for garnish

- 4 large ripe mangoes
- 2 tbsp. canola oil
- 2 medium yellow onions, peeled and diced

- 3/4 cup light brown sugar
- 20 tbsp (2-1/2 sticks) unsalted butter, at room temperature
- For the ganache:

Easy Cheese and Corn Tamales with Poblano Cream

In food processor, grate jack cheese and remove to large bowl
- For the Poblano Cream:
- 4 lbs. masa de maiz (Maseca is a popular brand)
- 1 ancho chile
- 1 8-oz. pkg. cream cheese
- 1 lb. grated jack cheese
- 2 tablespoons chopped cilantro
- 1 pasilla pepper, roasted, peeled and minced
- 1 lb. pkg. frozen petite white corn
- 1 egg

Homemade Cashew Milk
