- 1 ⁄2 tsp. sweet paprika
- Kosher salt
- 9 Tbs. extra-virgin olive oil
- 1 shallot, thinly sliced
- 1 ⁄2 cup pumpkin seeds (pepitas)
- One 1-1⁄4-lb. skirt steak, cold
