Kale and Sausage Stuffed Delicata Squash Recipe

Delicata squash is an heirloom variety and with it’s edible skin, it tastes similar to a sweet potato
- 2 medium delicata squash, halved and seeded
- 2 tablespoons olive oil
- 6 oz Italian style turkey sausage
- 1/2 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon dried sage
- pinch nutmeg
- pinch cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 bunch kale, coarsely chopped (about 2 heaping cups)
- 1 tablespoon cooking sherry
- 2 tablespoons chicken stock or water
- 1/4 cup grated jarlsberg or other swiss cheese<
- 1/4 cup grated parmesan cheese
- 1/4 cup breadcrumbs (optional)
Spicy Sausage Stuffed Monterey Mushrooms

Wipe the mushrooms and pat dry with paper towels
- 24 medium mushroom caps
- 1 (16 ounce) package hot ground pork breakfast sausage or 1 (16 ounce) package regular ground pork breakfast sausage
- 8 ounces cream cheese or 8 ounces neufchatel cheese, I use Neufchatel
- 2 ounces monterey jack cheese or 2 ounces monterey jack pepper cheese, shredded
- 1 tablespoon crushed red pepper flakes, less for less heat
- 2 tablespoons parmesan cheese, shredded
Risotto with Bacon and Kale

Place a rack in the center of the oven
- Ingredients
- 4 slices bacon, chopped coarsely
- 1 large onion, chopped
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup Arborio rice
- 3 cups low-salt chicken broth, plus 1/4 to 1/2 cup
- 3 tablespoons fresh lemon juice (about 1 large lemon)
- 3/4 cup diced cooked chicken
- 3 medium curly kale leaves, stemmed and chopped into 1-inch pieces (about 3 cups)
- 1 roasted carrot, chopped
- 1 roasted parsnip, chopped
- 1 roasted shallot, chopped
- 1/2 cup freshly grated Parmesan
Roasted Caesar Salad with Chicken Croutons

1. Heat oven to 450ºF. Coat small rimmed baking sheet with cooking spray
- DRESSING:
- 1/3 cup mayonnaise
- 1 1/2 tablespoons milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon lemon juice
- 1/2 teaspoon Worcestershire sauce
- 1 small garlic clove, minced
- Dash salt
- Dash pepper
- CROUTONS:
- 3/4 cup corn flake crumbs
- 2 boneless skinless chicken breast halves, cut into 1-inch pieces
- SALAD:
- 1 romaine lettuce heart, halved lengthwise
- 1 tablespoon extra-virgin olive oil
- 1/2 avocado, sliced
- 1/4 cup shredded Parmesan cheese
Chocolate Avocado Shake

This rich, healthy chocolate shake recipe is dairy-free and gets its creaminess from avocado instead of ice cream
- 1 ripe avocado, halved and pitted
- 1 1/2 cups vanilla almond milk or other nondairy vanilla milk
- 3 tablespoons unsweetened cocoa powder
- 3 tablespoons brown sugar or maple syrup, or to taste
- 2 tablespoons nondairy semisweet chocolate chips, melted (see Tip)
- 1 tablespoon vanilla extract, or to taste
