Zucchini Tots

Preheat oven to 400°F. Spray a baking sheet with cooking spray
- cooking spray
- 1 packed cup grated zucchini
- 1 large egg
- 1/4 medium onion, minced
- 1/4 cup grated reduced fat sharp cheddar cheese
- 1/3 cup seasoned breadcrumbs
- 1/4 tsp kosher salt and black pepper to taste
BEEFY CABBAGE SOUP SLOW COOKER

brown ground beef and put into slow cooker add rest of ingred
- 1 pound ground beef (I used 1 1/2 lb)
- 1 16 oz pkg cole slaw mix (I used 1 head cabbage, carrots)
- 1 15 oz can cut green beans
- 1 15 oz can whole kernal corn
- 2 15 oz cans italian stewed tomatoes (or 1 qt home canned or 2 big cans regular tomatoes)
- 2 14 oz cans beef broth (I used broth from beef base 1 qt--1 1/2 T with 1 qt water)
Pineapple Sheet Cake

Mix all together until smooth
- Pineapple Sheet Cake
- 2 cups All purpose flour
- 2 cups sugar
- 2 tsp. baking soda
- 1/4 tsp. salt
- 2 eggs
- 20 ounce can (about 2 cups) crushed pineapple, in juice, don’t drain
- 1 tsp. vanilla
- 1/2 cup nuts
HAM SALAD

Combine all ingredients in a large bowl and mix
- 6 cups ham, coarsely ground
- 4 eggs, hard boiled and chopped
- 1 cup celery, finely chopped
- 1/2 cup onion, finely chopped
- 1/2 cup sweet pickle relish
- 1 cup mayonnaise
- 4 tablespoons Dijon mustard
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried basil
- Combine all ingredients in a large bowl and mix
McDonald's Copycat Special Sauce

Directions Stir all ingredients together in a small bowl
- 1/4 C. salad dressing (like Miracle Whip®)
- 1/4 C. mayonnaise
- 3 Tbsp. French salad dressing
- 1/2 Tbsp. sweet pickle relish
- 1 1/2 Tbsp. dill pickle relish
- 1 tsp. sugar
- 1 tsp. dried, minced onion
- 1 tsp. white vinegar
- 1 tsp. ketchup
- 1/8 tsp. salt
CAULIFLOWER, BROCCOLI CASSEROLE

- broccoli in bite size pieces
- 1 stick
- marg. melted
- 2 -8 oz.
- cream cheese, soft

In a saucepan bring 2 cups water to a boil
- 1 cup uncooked white rice
- 1/4 cup white sugar
- 2 (15 ounce) cans crushed pineapple
- 1 cup miniature marshmallows
- 1 cup heavy cream, whipped
- 6 maraschino cherries

Preheat oven to 350º F. Rinse potatoes under cool, running water and pat dry with paper towels
- 6 russet potatoes (or smaller potatoes if that's what you have on hand; baking time may vary)
- 1/2 cup extra-virgin olive oil
- 2 tablespoons kosher salt, or to taste

- 5 pounds potatoes, peeled and cut into wedges
- 1 package (8 ounces) reduced-fat cream cheese, cubed
- 2 egg whites, beaten
- 1 cup (8 ounces) reduced-fat sour cream
- 2 teaspoons onion powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon butter, melted
