Peanut Butter Cup Shake Vitamix

Directions 1.Place all ingredients into the Vitamix container in the order listed and secure lid
- Ingredients
- ◦2 Tablespoons (18 g) peanuts
- ◦2 Tablespoons (30 ml) chocolate syrup
- ◦1 cup (240 ml) vanilla nonfat frozen yogurt or ice cream
- ◦1/2 cup (120 ml) milk
- ◦1 cup (240 ml) ice cubes
Ham Hock and Black Bean Soup

Place ingredients in crock pot and cook on high for 6-8 hours
- 2 ham hocks or ham
- 4 cups water
- 2 cans black beans, drained and rinsed
- 1 can tomatoes
- 1 red pepper, diced
- 1 small onion, diced
- 3 stalks celery, diced
- 3 carrots, peeled and diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 2 bay leaves
MACARONI SALAD with green olives

fold together all ingredients in large bowl refrigerate for 1 hour or overnight before serving
- 1 pound box elbow macaroni-prepared as directed on box
- 4 hard boiled eggs, peeled, coarsely chopped
- 3 ribs celery sliced
- 1 medium onion chopped
- 1/2 cup green olives-halved (I use a little more)
- 1/2 cup mayonnaise
- 2 T milk
- 2 T white vinegar
- 1 T sugar
- 1 tsp salt
PEANUT BUTTER TEXAS SHEET CAKE WITH PEANUT BUTTER ICING

DIRECTIONS: Sift together flour, sugar, salt and baking soda in a large bowl; set aside

- 1/4 c. creamy peanut butter

- ICEING:
- 1/2 c. butter
- 1/4 c. creamy peanut butter
- 1/3 c. plus 1 T. milk
- 16-oz. pkg. powdered sugar
- 1 t. vanilla extract
Tomato Sauce

Instructions Before you begin, pour your two cans of tomatoes into a bowl and crush with your hand
- 1/3 cup good quality extra virgin olive oil
- Pinch of red pepper flakes
- 4 crushed garlic cloves
- 3/4 cup chopped onion (optional)
- 1 teaspoon fresh chopped oregano, divided, or 1/2 teaspoon dried
- 1 tablespoon chopped fresh basil, divided, or 1/2 tablespoon dried
- 1 teaspoon fresh chopped mint, divided
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 28-ounce cans of whole tomatoes or two quarts of freshly canned garden tomatoes
- 1/4 cup freshly grated Parmesano Reggiano cheese
- 2 tablespoons unsalted butter

Makes about 4 dozen Directions Preheat oven to 350 degrees
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups (2 1/2 sticks) butter, room temperature

- 3/4 cup dark brown sugar

Summer Vegetable Soup Recipe

In a large saucepan, saute onion in oil until tender
- 1 small onion, quartered and thinly sliced
- 1 tablespoon olive oil
- 4 cups reduced-sodium chicken or vegetable broth
- 1 cup sliced zucchini
- 1 can (15-1/2 ounces) navy beans, rinsed and drained
- 1/2 cup diced peeled red potato
- 1/2 cup cut fresh green beans (2-inch pieces)
- 1/2 cup chopped peeled tomato
- 1/4 teaspoon pepper
- 1/8 teaspoon ground turmeric
- 1/4 cup chopped celery leaves
- 2 tablespoons tomato paste

- 1/2 cup butter
- 1 cup chopped onion
- 1 cup chopped celery
- 8 cups dry bread crumbs
- 1-1/2 teaspoons salt
- 1 teaspoon poultry seasoning
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried sage
- 1 cup chicken broth, or as needed

In a mixing bowl whisk together the milk, water, salt and vanilla extract
- 1 (9 inch) deep dish pie shell, unbaked
- 1 (14 ounce) can sweetened condensed milk
- 1 1/4 cups hot water (Not boiling or it will cook your eggs)
