I use Alum. Foil to make my individual "boat", but if you have small oval baking dishes, that would work great!

  • Potatoes:
  • 1 1/2 cups panko bread crumbs
  • 1/2 cup fresh grated Parmesan cheese
  • 1 handful fresh flat-leaf parsley
  • 3 large garlic cloves, minced
  • 1 lemon zested, and sliced thin
  • Coarse salt to taste
  • 1 1/2 lbs. white potatoes (about 4 medium) and sliced into 1/4” thick
  • Cod:
  • 4 (6oz) skinless cod fillets, 1 to 1 1/2 “ thick
  • 1 tsp Lemon pepper
  • 4 sprigs thyme
  • 3 Tbl of Avocado oil or more if needed
  • 3 Tbl unsalted butter, cut into 1/4 “ pieces
  • 3 medium garlic cloves, minced

  • Brandy Butter:

  • We prefer this butter less sweet, but more sugar can be added based on personal preference and the amount of sweetness in the strawberries or preserves.
