Joys Jamaincan Banana Nut Bread

Delicious way to really enjoy Real Tropical flavors in you Banana Bread
- 4 cups all-purpose flour
- 1 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 cup granulated sugar
- 1/2 cup butter, softened
- 4 large eggs
- 3 cups mashed ripe banana (about 4-5 bananas)
- 1/2 cup pina-colada flavored low fat yogurt
- 1/4 cup (well drained), crushed pineapple
- 6 tablespoons dark rum OR apple cider,Coconut Rum or Rum extract.
- 1 teaspoon vanilla extract
- 1/4 cup Pina-Colada drink mix
- 1 1/4 cup flaked sweetened coconut
- 1 cup toasted Pecans, chopped.
- Cooking spray
- drizzle recipe (optional)
- 2 tablespoon flaked sweetened coconut
- 1 cup powdered sugar
- 3 tablespoons fresh lime or lemon juice

Rhubarb and Strawberries or Apples crisp

I found this recipe in a box of Quaker Oats about 20 years ago
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 3 cups sliced fresh rhubarb or frozen rhubarb, thawed
- 2 cups sliced peeled apples or sliced strawberries
- 1 cup quick-cooking or old-fashioned oats
- 1/2 cup packed brown sugar
- 1/2 cup butter, melted
- 1/3 cup all-purpose flour
- 1 teaspoon ground cinnamon
- Vanilla ice cream, optional
- Editor's Note: If using frozen rhubarb, measure rhubarb while still frozen, then thaw completely. Drain in a colander, but do not press liquid out.

- Brandy Butter:
- 1/2 cup butter
- 1/4 cup superfine sugar
- 3 tablespoons brandy
- 1/2 teaspoon vanilla extract
- Makes 3/4 cup
- First cream the butter until light and fluffy; then beat in the sugar a little at a time. When the mixture is very white and frothy, beat in the brandy and vanilla.
- Chocolate Butter:
- 1/2 cup unsalted butter
- 1 ounce unsweetened chocolate, melted and cooled
- 1/8 teaspoon salt
- 2 teaspoons vanilla
- 1 cup confectioners sugar, sifted after measuring*
- 2 tablespoons chopped nuts, optional
- Makes 1 cup
- You can reduce the sugar for a less sweet butter.
- Cinnamon Butter:
- 1/2 cup butter
- 1 cup honey (substitute superfine sugar if you don’t like honey)
- 1 tablespoon cinnamon (you can add more to taste)
- Makes 1.5 cups
- Cranberry Butter:
- 1 cup butter
- 1/3 cup cranberries (fresh or frozen)
- 1/4 cup maple syrup
- 1 tablespoon orange zest (optional)
- Makes 1.5 cups
- Great for pancakes and waffles.
- Ginger Orange Butter:
- 1/2 cup butter
- 1/2 cup orange marmalade, melted over low heat
- 1 tablespoon balsamic vinegar
- 1 tablespoon crystallized ginger, finely chopped
- Honey Butter:
- 1 cup butter
- 1/4 cup honey
- 1/4 cup confectioners sugar
- Makes 1.5 cups
- Honey Vanilla Butter:
- 1/2 cup butter
- 1/2 cup honey
- 1/2 cup whipping cream
- 1 teaspoon vanilla
- Makes 1.5 cups
- First cream the butter with the honey. Slowly add the whipping cream, beating constantly until the mixture is fluffy. Then add the vanilla.
- Maple Butter:
- 1 cup butter
- 1/2 cup maple syrup
- A delight at breakfast.
- Mint Butter:
- 1/2 cup butter
- 1 tablespoon confectioners sugar
- 2 tablespoons chopped fresh mint or 1/2 teaspoon peppermint extract
- Try this with chocolate bread or muffins.
- Orange Butter:
- 1/2 cup butter
- 1 tablespoon orange juice
- 1 teaspoon grated orange peel
- Pecan Butter:
- 1 cup butter
- 1/4 cup brown sugar, packed
- 1/2 cup finely chopped pecans
- Strawberry Butter:
- 1/2 cup butter
- 1/2 cup puréed strawberries or 2 tablespoons of strawberry preserves (not jelly or jam)
- 1 tablespoon confectioners sugar*
- 1 teaspoon grated orange peel or 1
- teaspoon fresh lime juice
- Makes 1 cup
- We prefer this butter less sweet, but more sugar can be added based on personal preference and the amount of sweetness in the strawberries or preserves.

- 1 - Loaf of day old bread or 1 box dressing croutons
- 2 - eggs
- 2 - cups chicken or turkey stock (might need more or less to taste)
- giblets from the bird (optional, I like to use them)
- 1-small onion diced
- 2-stalks celery diced small
- 1/2-tsp thyme
- 1 -bay leaf
- 1 - tbsp poultry seasoning
- 1 - tsp salt
- 1 - tbsp chopped parsley
- 2 - cups fresh mushrooms
- 1 - can water chestnuts
- 1/2 - tsp black pepper
- 1 - stick butter half room temp and half melted.
- option 1: 1/2 pkg of regular Jimmy Dean sausage cooked and drained.
- Option 2: One lb of fresh oysters, drained dried and lightly diced.

- 1 box Betty Crocker® brownie mix
- Butter and eggs called for on brownie mix box
- 1 package (8 oz) cream cheese, softened
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- 2 cups sliced fresh strawberries
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1/2 cup apple jelly

These are the only apple dumplings I've ever made, they're so good, I've never looked for another recipe
- Sauce:
- 1 cup sugar
- 1 cup water
- 1/8 tsp cinnamon ( I use about 1 tsp)
- 1/8 tsp nutmeg ( I don't use)

- Dough;
- 2 cups enriched flour
- 2 tsps baking powder

- 1 box Devil's Food Cake Mix, I use Betty Crocker, 18 ounce box
- 1 box instant chocolate pudding mix, 3.9 ounces
- 3 whole eggs
- 1 1/4 cup water
- 1/2 cups canola oil
- BUTTERCREAM FROSTING:
- 3 1/2 cups powdered sugar
- 1/2 cups cocoa powder
- 3/4 cups butter, room temperature
- 1/4 cups shortening, room temperature
- 1 teaspoon vanilla extract
- 6 tablespoons heavy whipping cream, more or less as desired
- DECORATION:
- 11 packages (4 sticks each) Kit Kat Bars
