A slow cooked Cuban "Beef Stew"

  • 2 lbs beef flank steak
  • 1 tablespoon vegetable oil
  • 1 cup beef broth
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 small onion, sliced
  • 1 green bell pepper, seeded and sliced into strips
  • 2 garlic cloves, chopped
  • 1 teaspoon fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar

Place all of the ingredients into a 3 1/2 or 4 quart crockpot and add chicken stock to cover (about 3-4 cups)

  • Moroccan Chicken Stew
  • 2 chicken breasts, cut into cubes
  • 2 carrots, peeled and cut into chunks
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 small sweet potato, peeled and cut into chunks
  • 1 can chickpeas, rinsed and drained
  • 1 T tomato paste
  • 2 t cinnamon
  • 2 t cumin
  • 1/2 t coriander
  • 1/2 t cayenne pepper
  • 1 cup green beans, cut into 1 inch pieces
  • Chicken stock
  • Place all of the ingredients into a 3 1/2 or 4 quart crockpot and add chicken stock to cover (about 3-4 cups).  Cover and cook on low for 6-8 hours.  Serve over couscous or rice and sprinkle with chopped cilantro

For about 20 years this recipe was just a lovely memory

  • 3 -4 lbs pork (cut in 2-inch cubes) or 3 -4 lbs chicken (cut into serving pieces)
  • 1/2 cup vinegar
  • 1/2 cup soy sauce
  • 1 cup water
  • 2 -3 bay leaves, crumbled
  • 2 teaspoons peppercorns (whole)
  • 4 garlic cloves, crushed
  • 1 medium onion, chopped
  • 3/4 teaspoon ground pepper
  • 2 teaspoons salt (optional, I do not put it in, it is what the original cook uses)
