Kimberly's Simply Southern Vinegar Pie

Preheat oven to 350 degrees
- Ingredients
- 1 pie crust
- 3/4 stick margarine
- 1 cup sugar
- 2 eggs
- 3 1/2 teaspoons white distilled vinegar
- 1 teaspoon vanilla extract
- 2 teaspoons self-rising flour
- 1/2 cup chopped pecans
- 1 cup heavy cream
- 1 cup fresh raspberries

Directions For the grit cakes: 1
- 3 1/2 cups milk
- 4 garlic cloves, minced & divided
- 1 cup quick grits
- 2 tablespoons parsley
- 1/2 cup smoked cheddar
- 1/2 teaspoon chicken base
- 1/2 tsp salt
- 1/4 tsp pepper
- 5 strips thick cut Applewood smoked bacon, cut into lardons
- 1/4 cup shallots, minced
- 1/2 cup heavy cream
- 1 cup creamed corn, canned
- 1 teaspoon cajun seasoning
- 1 tablespoon thyme, chopped
- 1 pound large shrimp, (16-20) shelled and deveined, tail on
- Salt
- Pepper

Directions 1. Preheat oven to 350 degrees
- 1 stick unsalted butter plus 2 tablespoons, divided
- 1 sleeve crackers, crushed
- 2 tablespoons flour (heaping)
- 2 cups milk
- 8 ounces velveeta cheese, cut into cubes
- 1 cup asparagus, trimmed cut into 1 inch pieces
- 1 cup mushrooms, sliced
- 1 cup frozen peas
- 4 ounces pimento
- 2 cups raw lobster meat, cut into 1 inch pieces
- 1/2 teaspon salt
- 1/4 teaspoon pepper
- 1 cup onion, minced for topping

Directions: Put all ingredients in crock-pot, stir
- Ingredients:
- 1 bag of pre-cooked ground beef with peppers and onions from my freezer
- 2 cans of chili beans
- 1 can black beans
- 1 can Rotel
- 1 can stewed tomatoes
- 1 can (19oz) of ready-to-serve tomato soup (not condensed)
- 1 can whole kernel corn, drained
- 1-2 cans whole potatoes
- 1 taco seasoning packet
- 3 tsp. Tabasco brand, Chipotle Pepper Sauce
- 2 tsp. Lea & Perrins Worcestershire Sauce
- 2 tsp. garlic, minced
- 1 cup water
- sliced jalapenos, sour cream, shredded cheese ~ for garnish (optional)
OLD FASHIONED MACARONI AND CHEESE

Slow Cooker Pork Carnitas

It’s a day late for Cinco de Mayo, but Mexican is yummy any time, so it’s all good
- 3-4 lbs pork roast
- 1/2 cup chopped onion
- 2-3 cloves garlic, minced
- 2 tsp cumin
- 2 tsp dried cilantro
- 1 tsp salt
- 1 tsp oregano
- 1/2 tsp cinnamon
- 1/2 tsp paprika
- 2-4 bay leaves
- 2 cups chicken or vegetable broth
