Rhubarb Dream Bars

1. Preheat oven to 350 F. 2
- Crust

- 2 c all-purpose flour
- 2/3 c confectioners' sugar
- 1 c butter, softened

- 1-1/2 tsp salt
- 1/2 c all-purpose flour
- 4 eggs, beaten
- 3 c white sugar (I used only 2 cups)
- 4-1/2 c chopped fresh rhubarb
German Potato Salad

Boil baking potatoes with jackets on
- 6-7 baking potatoes
- 1-2 bunches chopped green onions
- 12-15 slices bacon, crisply cooked & crumbled
- 1/2 c parsley, chopped
- 7-8 boiled eggs, mashed
- Miracle Whip - less than a quart but more than a pint

- 2 (8 oz.) pkgs. cream cheese, softened
- 2 (8 oz.) blocks Monterey Jack cheese with peppers, shredded
- 16 oz. smoked Cheddar cheese, shredded
- 6 green onions, minced
- 2 (4.5 oz.) cans chopped green chiles, drained
- 1 (1-1/4 oz.) envelope taco seasoning mix
- Avocado-Mango Salsa
- 1/4 c hot jalapeno jelly
- 1/4 c fresh lime juice
- 2 large mangoes, peeled and diced*
- 1 large red bell pepper, diced
- 1/4 c chopped fresh cilantro

- 1 1/2 cups graham cracker crumbs
- 1/2 cup granulated sugar
- 4 tablespoons (1/2 stick butter) melted
- 2 (14-ounce) cans sweetened condensed milk
- 1 cup key lime or regular lime juice
- 2 whole large eggs
- 1 cup sour cream
- 2 tablespoons powdered sugar
- 1 tablespoon lime zest

- 1 8 oz can tomato sauce
- 1/4 c brown sugar
- 1/4 c dark molasses
- 1 medium onion, diced
- 1/4 c bacon grease

- 2 c heavy cream
- 2 cloves garlic, minced
- Leaves from 4 fresh thyme sprigs
- Nutmeg, grated
- 1 c grated Parmigiano-Reggiano cheese
- 3 T chopped fresh chives plus more for garnish
- salt & black pepper

- 1/2 cup fresh lime juice
- 1/2 cup white tequila
- 1/4 cup orange liqueur, such as Grand Marnier
- 1/4 cup simple syrup, or more as needed
- 4 thin slices cucumber
- 1 jalapeno, halved lengthwise
