Greek Salad with Oregano Dressing

- Dressing:
- 1 Tbsp red wine vinegar
- 2 tsp fresh lemon juice
- 1 clove of garlic, pressed
- 1/2 tsp salt
- 1/2 tsp dried oregano
- Pinch of cinnamon
- 1/4 tsp ground pepper
- 1/4 c olive oil
- Salad:
- 1 large head romaine lettuce, cut into bite-size pieces
- 1 pound feta cheese, crumbled
- 1 medium cucumber, diced
- 2-1/2 cups cherry tomatoes
- 4 oz. black Greek olives
- 4 oz. green Greek olives
- 1 small green pepper, chopped
- 1 avocado, sliced
- 1 red onion, sliced
- salt & pepper to taste
Seafood AuGratin

Melt 1 stick butter, add green onions & shrimp
- 2 sticks butter, divided
- 1 bunch green onions
- 1-1/2 lbs peeled shrimp
- salt & lemon pepper or 1/2 tsp creole seasoning
- 1-1/2 lbs lump crabmeat
- 1 can artichokes, chopped
- 1/4 c flour
- 1/2 c heavy cream
- 1/4 c dry sherry
- 1 c chicken broth or bouillion (prepared)
- 1 Tbsp worcestershire sauce
- dash of Tobasco
- 1/4 c parmesan cheese, grated
- 1 c cheddar cheese, grated
Tomato-Pesto Tart

- 1/2 (15 oz.) pkg. refrigerated piecrusts
- 2 c (8 oz.) shredded mozzarella cheese, divided
- 5 plum tomatoes, sliced
- 1/2 c mayonnaise
- 1/4 c grated Parmesan cheese
- 2 Tbsp. basil pesto
- 1/2 tsp. freshly ground pepper
- 3 Tbsp. chopped fresh basil
Mocha Coffee

In a blender, mix all ingredients until powdered & smooth
- 2/3 c nonfat dry milk
- 1/3 c sugar
- 2 Tbsp unsweetened cocoa powder
- 1/4 c instant coffee
- pinch of ground cinnamon

- 2 pkg lady fingers
- 2 8 oz pkg cream cheese
- 1 c sugar
- 2 T vanilla
- 1 pt whipping cream, whipped

Avocado Mayonnaise

- 1/4 c fresh basil leaves
- 1 garlic clove, minced
Kris' Amazing Shredded Mexican Beef

Trim the roast of any excess fat, and cut into four pieces
- 1 (4 pound) beef bottom round roast or other lean roast
- 2 teaspoons ground black pepper
- 1 large onion, diced
- 1 (7 ounce) can chopped green chilies
- 2 teaspoons chili powder
- 1 teaspoon cayenne pepper
- 1 tablespoon garlic powder
- 2 teaspoons ground cumin
- 1 (7 ounce) can chipotle peppers in adobo sauce, or to taste
- 1 cube beef bouillon
Turtle Cake

1. Mix the cake according to package directions
- 1 package German chocolate cake mix
- 14 oz. caramels
- 1/2 cup butter
- 1/2 cup evaporated milk
- 1 cup chocolate chips
- 1 cup chopped pecans

- 3 c cooked sweet potatoes, mashed

- 1 c light brown sugar

- 1/3 c butter, melted
- 1 c chopped nuts
- 1/2 c coconut
