For the noodles: In a large pot of salted boiling water, cook the noodles according to their package directions

  • Salt
  • 8 ounces dried Chinese egg noodles, or 1 pound fresh

  • 1/4 cup plus 2 tablespoons oyster sauce
  • 3 tablespoons low-sodium soy sauce
