Bourbon Chicken Bites

- 2 Tbsp cornstarch
- 1 tsp garlic powder
- 1 tsp ground red pepper (cayenne)
- 1/2 tsp salt
- 2 pounds boneless, skinless chicken breasts, cut into 2" chunks
- 1/4 c canola oil
- SAUCE
- 1 c jalapeno pepper jelly
- 1 Tbsp light soy sauce
- 2 Tbsp bourbon
Chocolate Macaroon Pizza

Preheat oven to 375. Place a 15" circle of parchment paper on large round stone
- 1 pkg (19-21 oz) fudge brownie mix (plus ingredients to make brownies)
- 2 egg whites
- 1 pkg (14 oz) sweetened flaked coconut
- 1 can (14 oz) sweetened condensed milk
- 1 pkg (2.25 oz) sliced almonds
- 2 Tbsp (1 oz) semi-sweet chocolate morsels, melted
- 1 tsp vegetable oil
Marinated Pea & Corn Salad

Mix vegetables and cheese together in bowl
- 1 can LeSueur green peas, drained
- 1 can white shoe peg corn, drained
- 1 small jar pimientos, chopped
- 1 c chopped celery
- 1 c chopped onion
- 1/2 c shredded cheese
- 1/4 c oil
- 1 c sugar
- 1/2 c vinegar
- 1 t each salt & pepper
Broccoli Salad

- 2 c fresh broccoli, chopped
- 1 c fresh cauliflower, chopped
- 1 red onion, diced
- Sharp cheddar cheese, shredded
- Bacon, cooked, chopped
- Red cherry tomatoes, sliced
- Dressing
- 1 c mayonnaise
- 1/2 c sugar
- 2 tsp vinegar
Ranch Chicken Sandwiches

With a very sharp knife, cut the chicken breasts in half down the middle
- 4 whole boneless, skinless chicken breasts
- 1/2 cup honey
- 1/2 cup Dijon mustard (or country/grainy mustard)
- 1 teaspoon paprika
- 1/2 teaspoon salt
- Freshly ground black pepper
- Juice of 1 lemon
- Crushed red pepper, for sprinkling, optional
- 1 pound thick-cut bacon, sliced in half
- 2 cups grated sharp Cheddar
- 8 soft whole grain buns

- Pinch sugar
- 1 1/2 tablespoons capers, drained
Crispy Garlic Chicken

- 1 c Minute Rice
- 1 c onions, chopped
- 1 c celery, chopped
- SAUCE
- 1 stick butter, melted
- 1 can cream of mushroom soup
- 1 small jar Cheese Whiz
Panera Broccoli Cheese Soup

Directions Sauté onion in butter
- 1 tablespoon melted butter
- 1 ⁄2 medium chopped onion
- 1 ⁄4 cup melted butter
- 1 ⁄4 cup flour
- 2 cups half-and-half cream
- 2 cups chicken stock
- 1 ⁄2 lb fresh broccoli (chopped into bite size pieces)
- 1 cup carrot, julienned, grated
- 1 ⁄4 teaspoon nutmeg
- 8 ounces grated sharp cheddar cheese
- salt and pepper
- crusty bread or bread bowl
- 2 cups whole milk
