- Bars:
- 1 (29 oz.) can pumpkin puree
- 3/4 c. canola oil
- 3 large eggs
- 1-2/3 c. sugar
- 2 c. all purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1 tsp. ground nutmeg
- Maple Cream Cheese Frosting:
- 2 c. powdered sugar, sifted
- 1/2 c. unsalted butter, softened
- 1 (8 oz.) package cream cheese, softened
- 1 tsp. maple extract

- 2 tablespoons unsalted butter

- 4 cups low-fat milk
- 2 tablespoons mascarpone cheese
- 1 cup freshly grated parmesan cheese
- 3/4 cups pumpkin puree
- 1 tablespoons freshly chopped sage leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon pumpkin pie spice
- freshly grated fontina cheese for topping

These cupcakes come from a very simple batter that can be mixed by hand
- Vanilla Cupcakes
- 1 and 2/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 2 egg whites
- 1/4 cup vanilla greek yogurt (or plain; or regular yogurt; or even sour cream)
- 3/4 cup vanilla almond milk (or cow's milk; or soy milk; or plain almond milk)
- 2 teaspoons vanilla extract
- seeds scraped from 1/2 split vanilla bean
- Vanilla Bean Frosting
- 1 cup (2 sticks) unsalted butter, softened to room temperature
- 3-4 cups powdered (confectioners') sugar
- 1/4 cup heavy cream (see note below about substituting milk or half-and-half)
