Chocolate-Chip-Cookie Icebox Cake

Directions To make the cookies: Preheat the oven to 350 degrees F
- For the Cookies:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/4 teaspoons salt
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 1/2 cups packed light brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 12 ounces semisweet chocolate chips or chunks (2 cups)
- For The Cream:
- 4 cups heavy cream, well chilled
- 8 ounces mascarpone cheese
- 2 tablespoons granulated sugar
- 1 tablespoon whiskey (optional)
- Chocolate curls, for garnish
Filet Mignon with Morel Cream Sauce

- 4 (8 ounce) beef filet mignon
- 1 tablespoon butter
- 1 pound morel mushrooms
- 1 small shallot, finely minced

Fancy Frosted Mint Brownies

- Fudge Brownies:
- Mix the following ingredients together:
- 1 1/2 Cups Melted Butter
- 3 Cups Sugar
- 1/2 Cup Cocoa
- Add: 6 Eggs, one at a time
- Then add:
- 2 1/4 Cups Flour
- 1/2 Teaspoon Salt
- 1 1/2 Teaspoons Vanilla
- You could also add chopped nuts to the brownie mix if you want
- Mint Frosting Recipe:
- 3 Tablespoons Butter
- 3 Tablespoons Milk
- 2 3/4 Cups Powdered Sugar
- 3-4 drops of green food coloring (to desired color)
- 2-3 drops peppermint oil OR 1/4 – 1 teaspoon McCormick Pure Peppermint Extract (varies depending on how strong you want the flavor)

- 1/2 cup orange juice
- 1 tsp. lime juice
- 1/2 cup greek yogurt, plain
- 1/8 tsp. rum extract

Fresh Spaghetti with Heirloom Tomatoes and Basil

Bring a large pot of salted water to a boil
- 2 lb. (1 kg) ripe heirloom tomatoes, diced
- 2 Tbs. extra-virgin olive oil, plus more for drizzling
- 1 Tbs. sherry vinegar
- 1/8 tsp. red pepper flakes
- 2 Tbs. finely chopped shallot
- 1 small garlic clove, minced
- Kosher salt and freshly ground pepper, to taste
- 1 batch Food-Processor Pasta Dough, rolled and cut into spaghetti or similar shape (see related recipe at left)
- 1/4 cup (1/2 oz./15 g) julienned basil leaves
- Shaved Parmigiano-Reggiano cheese, for garnish
20-Minute Turkey Taco Nachos

Heat a large skillet over medium heat and add olive oil
- 1/2 sweet onion, diced
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 pound 94% lean ground turkey (or whatever you choose)
- 1 1/2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
