Blackened Chicken Alfredo

Combine first 11 ingredients in a heavy-duty ziplock bag; add chicken

- 1 Tbsp garlic powder
- 1 Tbsp onion powder
- 1 Tbsp dried thyme
- 1 Tbsp dried oregano
- 1 Tbsp paprika
- 1 Tbsp dried tarragon
- 1 tsp salt
- 1 tsp ground red pepper
- 1/2 tsp black pepper
- 2/3 cup olive oil
- 1/2 cup Worcestershire sauce
- 4 chicken breast, pounded to an even thickness
- 1 (12oz) package dried fettuccine
- Alfredo Sauce
- 2 sticks butter, softened
- 1/2 lb grated Parmesan cheese, plus more for serving
- 1 tsp garlic powder
- Salt
- 1/2 cup plus pasta water
- Using an electric mixer, beat butter, garlic powder and Parmesan until creamy.
Crazy-Good Crab Cakes!

If you like crab, you should definitely give these a go
- 1 lb. Lump Crab Meat
- 2 Slices White Bread, crumbled, crust removed (I processed mine in a food processor)
- 1 Egg, beaten
- 2 tbsp. Mayo
- 1 tsp Seafood Seasoning (such as Old Bay Seasoning)
- 1 tsp. Worcestershire Sauce
- 1 tsp. Dijon Mustard
- 1 tbsp. Dried Parley Flakes (I used freshly chopped cilantro, instead)
- 2 tsp. lemon juice
- Extra virgin olive oil or butter (for sauteing)
Broccoli Salad with Sunflower Seeds & Cranberries

To a salad bowl, add broccoli, bacon, onion, seeds, and cranberries
- 2-3 broccoli crowns, just the florets, finely chopped (5-6 cups)
- 10 bacon slices, crisp-cooked and crumbled
- 1/3 c red onion, diced
- 1/3 c sunflower seeds
- 1/3 c dried cranberries, chopped (golden raisins are equally good)
- 1/2 c mayonnaise
- 2 T apple cider vinegar
- 2 t sugar
- salt and pepper
Salsa Roja (Roasted Red Salsa)

And people, this salsa. PEOPLE
- 16 full size tomatoes, or nearly a produce bag full of roma tomatoes
- (we used roma)
- 2-3 yellow onions
- 20-25 Serrano peppers (remove caps) Note: this many peppers
- makes it hot. Feel free to reduce number of peppers, or scrape the
- seeds and membranes out of them
- 8-10 cloves of garlic
- 1-2 Tbsp salt
- 1-2 bunches cilantro
Individual Seven-Layer Dips

In a small bowl mix taco seasoning with refried beans
- 1 (16 ounce) can refried beans
- 1 (1 ounce) package taco seasoning
- 1 cup guacamole or make homemade guacamole
- 1 (8 ounce) container sour cream
- 1 cup chunky salsa or pico de gallo; or make homemade pico de gallo
- 1 cup shredded cheddar or Mexican blend cheese
- 2 Roma tomatoes, diced
- 1/2 bunch of green onions, sliced
- 1 (2.25 ounce) can of sliced olives, drained
- 8 (9 ounce) plastic tumblers
- tortilla chips
- Note: All measurements are approximate. Depending on whether you want thicker or thinner layers you will need more or less.
